While I am off learning about cows, I just wanted to highlight a few of my favorite bloggers this week.

Abbe cooks and blogs over at This IS How I Cook.

Abbe and I have been blog friends for well over a year.  I love her story telling while she talks about a particular recipe or dish.   She’s an empty nester who doesn’t pass up the opportunity to spoil her kids when they come home – like over Memorial Day weekend when she made this amazeball Mexican breakfast casserole for her family.  Um, why haven’t I tried that?!  She had me at chorizo and green chiles!  Thank you for letting me steal your pics Abbe! 😀

Her son works at Matsuhisa in Vail, Colorado – holy balls this looks like an amazing restaurant.  Tony would die over this sushi!

Here are a few of my list of dishes that’s been on my short list to make of hers for a while:

Peppered Candied Bacon – um, this screams me – spicy and sweet and salty.  I love how she does a lattice with the bacon so that you get bacon in every bite of a BLT.

This New Mexican Red Chile sauce.  Um, couldn’t you picture this poured over fried eggs and hash on a Sunday morning?

Her North Carolina BBQ sauce recipe.  That brings back memories of my grandpa.  Who sadly died when I was only 11, but I still remember his pork BBQ to be the best I’d ever tasted.  I’ve tried making it at home but I am not there yet – only my Aunt Martha comes the closest to making it.   I puffy heart anything with vinegar in it!

And her Elote Corn in a Bowl – I’ve seen this around blogdom for the last year or so.  There used to be a Mexican grocery store near our house that had fresh corn on the cob, then slathered in Mexican sour cream, then sprinkled with Parmesan cheese and hot sauce.  I may give this a go using Greek yogurt in place of the mayo (not a fan of mayo!) but this would be a great dish to bring to a cook out.

I could go on all day, but you get the idea.  I love that Abbe has not only simple recipes you and I can make, but she also makes amazeball desserts.  I am too timid to even attempt any of her baked goods, but check out this King Cake she made!
