Since I haven’t done a normal grocery shop this week, I refuse to go to the store because I know we have plenty of food to eat.  A week ago though I bought a container of plain Chobani – I was going to make chicken tikka masala, but never got around to it.

So the breakfast parfait was back!  Sauteed apples and bananas in the middle, plain Greek yogurt and 1/3 cup granola.  I actually liked the tartness of the plain yogurt since the fruit and granola layers were so sweet.

One of the other secretaries had a half day, and the other secretary had lunch plans so I never made it out for my walk.  Plus it was so cold – weather.com said it was 42 degrees but with the wind felt like 34 and I didn’t have the right clothes for that temperature.

We have a Chinese restaurant across the street from our office and my boss and I ordered in.  I called our order in – I ordered beef and broccoli, asked for it spicy, it was one of their “lunch deals” for $7.50 that included an egg roll, fried rice and a pop.  I swear it was only like 7 minutes later that our doorbell rang – fastest delivery ever.

I brought my container into our work kitchen, got out my measuring cup and measured out 1/2 cup of the fried rice, and 1 cup of the beef and broccoli mixture.  The egg roll?  Nasty and greasy so that went into the garbage.  I literally have enough left over to have it again for lunch today.

This was really good – the beef was tender, they made it spicy and the broccoli was tender crisp.

On the way home I was thinking of things that I had in the house to make for dinner and texted Tony with these options:

salisbury steak with mashed potatoes, cheeseburgers with fries, cheddar brats with fries

Salisbury steak won!  You all have to try this recipe – I rewrote it for two people and reworked the calories (if you are on WW it would be 13 points).

Salisbury Steak for Two

  • 518 calories, 20 fat, 43 carbs, 3.4 fiber and 39 protein

Ingredients:

I put the baby spinach on the bottom of my plate.  Plated 3/4 cup of mashed potatoes on top of that.  Then put my crusty cheese bread on top and placed my Salisbury steak on top of that.  I poured half the gravy over the top, and finished it off with some more shaved Parm.  Tony got all the mushrooms – wish I liked them!

I love the crust that the Salisbury steak gets.  This is seriously a company worthy dinner.  But the best part?  With leftover mashed potatoes, this dish is seriously ready in 15 minutes.  Winning!

The only exercise I got yesterday was my 30 minutes of stretch.  I kinda lost my mojo but I plan to get at least an hour of exercise in today.  It’s another chilly day but I have packed warmer clothes to walk today at lunch.

Day 10 of 30 Operation Bad Ass

  • 1382 calories, 42 fat, 169 carbs, 18 fiber and 85 protein
  • 49% of calories from fat, 28% from fat and 23% protein
  • 30 minutes stretch

I didn’t talk to my brother at all yesterday, but I know that he starts his chemo therapy today.  My Mom is flying there today – the benefits of being retired she just booked an open ended ticket and doesn’t even know how long she’ll stay, but I know she’ll be a great support for not only my brother but for my SIL and their kids.

I have a confession though – the urge to overeat is still alive and well, although I am glad I’ve not given in.  But let’s just say I did look up the calories for a small deep dish pepperoni and sausage pizza, but made the better lunch choice after I saw that 1 slice of a small deep dish (let’s face it, I would have eaten the whole thing!) was 390 calories and 23 grams of fat – so it would have been 1560 calories and 92 grams of fat.  Thumbs down

I’ll claim that as a non-scale victory. Be right back
