I am closer to overnight oats – I realized my mistake as people started sending me message on Instagram – I thought a serving of oats was 1/4 cup for 4 points – that would be HALF a cup for 4 points – so my 1/4 cup oats the 3/4 cup unsweetened almond milk was still too much liquid – but still delicious!  I stirred in my Greek yogurt and that thickened it up.

Guys – hopefully next week I’ll have a link so you guys can get your hands on this Safe + Fair granola – it’s so good!!  This bowl of goodness is 6 points.

My sister and I walked Macy’s yesterday – you have to check out this video – I love embarrassing her!  

If you haven’t tried Tumaro wraps you are missing out.  I couldn’t find them by me and was hesitant to buy them online in case they tasted like ass – but they are delicious!  I’ve tried the white and whole wheat, and will probably have to order the pumpernickle one to make a skinny reuben sandwich.

When I got home from work, I had fun mail!  I had forgotten that Kbosh asked if I would check out their low carb pizza crusts.  I am all about my skinny pizza dough, but Jacob is doing Keto and these would work for him.  There were several different flavors – we used the broccoli one last night – each crust is only 120 calories and 4 smart points.  Just top frozen, bake for 18 minutes and you are done!

These came in handy because I had a beef and tortellini skillet on my dinner menu last night – but I defrosted beef in the fridge for a couple days and it was bad and I couldn’t use it.  I topped mine with my zero point marinara, 2.5 ounces of lite mozzarella from Trader Joe’s, and when it came out, topped it with fresh baby spinach, buffalo sauce and fat free ranch.

It was really good.  Jacob loved it.  While I missed my super crunchy crust, these will be great to have on hand – and low point to boot!  Thanks Kbosh!

I had some refrigerator pie dough that I needed to use up from Christmas.  So I made a batch of my mini cherry pies.  So good!  Did you know that the Hostess cherry pies are 22 points!  I used to eat those as a pre-breakfast on my way to work with a Dr. Pepper – nice!

The sugar free pie filling is sweet tart and so good!

Tracking like a boss!  I don’t strive to get blue dots every day – in fact I don’t mind switching it up – one day I may have 19 points, the next 28, but it all works out in the end.  Pretty proud of my tracking though!

Can’t wait for lunch!  I already told my bosses I’ll be taking a long lunch today.  Jenn and I are meeting Gina at Macy’s Culinary Kitchen.  Our $20 ticket includes this cookbook, which of course, she’ll autograph for me with this: “Biz, you’ll be in my shoes one day – I just know it!  Love, Gina.”  Or something like that.  Who knows?  Reach for the stars – you may just touch them!
