I can’t believe it. I reached 10,000 followers on Instagram!  The one and only reason I wanted to reach this milestone is because I wanted the swipe up feature to bring people over to my blog.  As it stands now, someone would ask “Biz, where is the recipe?!”  I’d explain:

“Go to my home page, click on the link in profile button, then hit the picture of the recipe you want and that will take you right to the recipe.”  But turns out, that’s really two steps too many that people were willing to take.  So I’d have to say “just google “my bizzy kitchen skinny pizza dough” or “my bizzy kitchen copycat vanilla bean scones.”  

Now in my story, I can just show a photo of a recipe and if you want it “swipe up!”  Only one tiny problem, I don’t know how to do that yet, so you’ll have to wait until I figure it out. šŸ˜€

Of course I hit up the farmers market at lunch yesterday – only two weeks left!  That went by in a hurry.  I was trying to think of other ways to use delicata squash, and I thought of a potato/squash twice baked potato?  I had hoped I could have used the shell of the squash to hold the filling so it would look pretty, but I microwaved the squash and potato on my “baked potato” setting, and the skin got really soft.  Maybe if I bake it, the skin will be firmer?

I let the squash and potato cool a few minutes, then sliced both in half.  I scooped out the squash, removing the seeds and added that with half of the potato.  I had 3 ounces of potato (2 points) and I added 2 tablespoons cashew milk, salt, pepper, crushed red pepper and a sprinkle of paprika and fluffed that together.  I stuffed it back into the potato shell, then topped with an ounce of Trader Joe’s lite mozzarella.  Then broiled it until nice and bubbly.

 

OMG, this potato was so good!  I think you need the crushed red pepper to balance the sweetness of the squash.  But it was a super filling side dish for 3 points.  On the side was a pork chop with a mushroom pan sauce – dinner came in at 7 points.
