Last Saturday morning, before we knew that Jacob’s grandma was going to pass away, I had a leisurely morning in the kitchen.  Even when Tony was sick, I could always find comfort of getting bizzy in my kitchen.  The last several weeks of his life, my kitchen was closed because he couldn’t stand the smell of food.  But if he were alive, I think he would have liked these breakfast croissants – well, sans the jalapeno goat cheese!

I think these would be perfect for a brunch for a crowd.  Whip up a batch of scrambled eggs and have a “toppings” bar like various cheeses, ham, and veggies.  I used reduced fat croissants, egg whites, rosemary ham and jalapeno goat cheese – holy balls was that delicious!

In order to get more surface space for my filling, I used my rolling pin and rolled each croissant out a bit, then for each croissant, I added 1/2 ounce of goat cheese (1), deli ham (1), egg whites and spinach (0).  Each croissant is 3 smart points, so you’ll have to adjust the points for whatever you decide to put in there.

Place your toppings in the croissant, and roll up – that’ it!  Oops, forgot to mention to preheat your oven to 375.

I brushed the top of the croissants with a bit of egg white, then sprinkled everything but the bagel seasoning, because well, I want to put that shit on just about everything.  I baked mine on my Baking Steel and baked them for exactly 11 minutes, but it could take up to 13 if you bake them on a regular cookie sheet.

Flakey, a bit spicy from the goat cheese, and the salt from the ham and the bagel topping – well, this was a delicious way to start the day.  I thought I would eat two, but one was plenty.  While each one is 5 points, paired with some fruit you’ve got yourself a great breakfast.  Best part is if you don’t have a crowd to feed, you can bake up 10 of them and store them in the freezer.  Just defrost in your fridge the night before and reheat in your oven or toaster oven.

I have been having trouble getting my pictures off my phone onto my computer the last two nights.  Gah – hopefully you saw my Instastory yesterday because my sister and I went out to lunch and I had the best ramen!  I’ll be having the second half for lunch today – so good!

I have Cooking Club tonight at Courtney’s!  I always love this one because it’s our “holiday” club, no particular theme – just heavy apps, dessert and um, just a smidge of wine 😀  I made shrimp cocktail with two dipping sauces – a cucumber dill sauce and a spicy Asian dipping sauce.  As always, I’ll have a recap on the blog tomorrow with recipes – maybe you’ll find something to incorporate into your holiday celebrations this year?!
