Yesterday was the first morning that I had to use my ice scraper on my car.  When I parked my car and started walking to the train station, I saw all these frosty leaves and they looked so pretty.  I am so excited to be getting a manicure tomorrow in anticipation of my nieces wedding this weekend.  Did I tell you that I am the official cake cutter?  I am pretty sure I am Sarah’s favorite Aunt.  Duh.

I wish this picture was prettier, but this was so tasty.  I put 1/2 cup shredded potatoes in the bottom of my skillet, added a cup of egg whites, and just set it and forget it – no flipping or stirring.  Just turned the heat on medium low, put a lid on it when I jumped in the shower, and done.  I added a bit of seasoning, Canadian bacon and hot sauce for this 4 point breakfast.

It was kind of a crappy day yesterday so my sister and I walked Macy’s.  We are having lunch out today since it’s my Friday.   I still need to post this recipe below – it is a butternut squash chili – while it’s slightly sweet, the cayenne pepper and hot sauce is a nice balance.   With the bit of cheese, lunch was 8 points.

I’ve talked about my love of cheese ends – its basically small pieces of cheese that stores will just wrap up and sell as is – like this parmesan regiano cheese hunk – that cheese sells for $20 a pound, but I got that nice chunk for $3.50 at The Fresh Market.  They have a “cheese ends” basket in the refrigerated cheese section, otherwise you can just ask behind the deli counter if they have cheese ends.  My local grocery store sells their sliced cheese ends for $1.99 a pound and I’ll just bring that home, throw it in my food processor and make my own grated cheese for $2 a pound.

Spaghetti and meatballs was on my menu last night – my trick for meatballs on a weeknight is to take the sausage out of the casing, roll into tiny meatballs, and by the time the pasta is cooked the meatballs are done, so this is a less than 15 minute dinner – perfect for a weeknight dinner.  I used Jennie-O hot turkey sausage, so they are super flavorful.  I sauteed the meatballs with zucchini and then mixed it all together at the end.  Each link is only 4 smart points, but because pasta is such a point buster, dinner was 12 points.

Hannah is every bit of the girly girl that I am not.  Truth be told I always wondered how she learned all the girly stuff because she definitely did not learn it from me.  I am the “roll out of bed” kind of person – my sister on the other hand won’t ever leave her house without makeup.  She got this new curling iron that is super skinny and we tried it in anticipation for the wedding this weekend.  I wish my hair would stay curly like that, so we will see – I may need to use my trusty Aqua Net to get it to stick!

 My timehop showed me that three years ago I brought these muffins to the nurses station where Tony was staying.  These cinnamon chip muffins reminded me of my beloved cinnamon chip scones from Starbucks.  I never posted the recipe for these because Tony got really sick after that day, but I’ll have to recreate these and post them soon, they would be perfect for Thanksgiving morning or the day after for a brunch.
