Cauliflower Mac N Cheese and Weekly WI

This weekend was the perfect balance of lazy, fun and productive.   After having a 20 point burger on Friday at lunch with my sister, I made this FIVE point pizza.  I used the Joseph’s lavash and after getting some tips on Instagram from people who’ve tried it, I baked this at 350 degrees on my baking steel for 10 minutes.  Lavash (2), my zero point marinara sauce, mushrooms and baby peppers and 1/4 cup of reduced fat Italian cheese blend (3).  I couldn’t even finish it.

I woke up at 7 a.m. on Saturday and thought “just sleep a little longer.”  My nose and head were still stuffed up because of my cold, and the next thing I knew it was 9 a.m.!  I missed the meeting, but went and weighed in and lost .4.  I’ll take it because I didn’t go to the gym or do Insanity because of my cold, and my only exercise was walking.

I was meeting my Mom for lunch, so I made this coffee protein shake for breakfast.  One cup leftover coffee (you could also use cold brew), 1 cup unsweetened almond milk (1) two cups of ice, and a scoop of Premier Protein chocolate protein powder.  Just blend and drink – it tasted like a Wendy’s frosty.

My Mom and I went to Mariano’s for lunch and hit up their salad bar.  My favorite salad – chicken finder salad!  It was a gorgeous day to sit outside and catch up.   We went to an estate sale where everything was free, then to Goodwill and then got some frozen yogurt.  Had we known how giant they were going to be, we would have split one!  We both ate about 1/2 a cup for 5 points and brought the rest home and put it in my Mom’s freezer.  


Mariano’s had sirloin steak on sale for $6 a pound and I picked up this cauliflower at a veggie stand near my Mom’s house.  Saturday nights dinner was like a steakhouse dinner, for a fraction of the cost.

Tony’s favorite side dish was creamed spinach.  However most creamed spinach calls for heavy cream and are around 10 smart points per serving.  My creamed spinach?  ONE SMART POINT.  1 cup fresh baby spinach, 1 tablespoon garlic hummus, 1 tablespoon unsweetened almond milk and salt and pepper – that was it.  The garlic in the hummus really gave this great flavor – I just put all those ingredients in my cast iron skillet over medium heat, the hummus melted and became creamy.  So good!


Cauliflower Mac N Cheese

A great low carb side dish, perfect with steak or chicken.

  • 1 large head of cauliflower
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 2 cups 50% reduced fat cheddar cheese
  • 1 cup unsweetened almond milk
  • 1 tablespoon Dijon mustard


  1. Melt the butter in a stock pot.  While that melts, put the whole head of cauliflower in the microwave and cook in fresh vegetable setting.  Once the butter is melted, add the flour and cook for 1 minute.  Slowly stir in the almond milk to make a roux. 

    Once the cauliflower cools, chop into small pieces.  Stir in the cheese, Dijon mustard, salt and pepper into the roux.  Stir in the cooked cauliflower and stir until combined.  You can broil for a few minutes if you want to get some color to the dish.  3/4 cup is 4 smart points.

Sunday morning I was LAZY.  Like so lazy.  The only thing I did was clean and vacuum my room and do two loads of laundry.  Besides that, I just laid on the couch and watched the Little League World Series – Tony used to love watching that.  Later in the afternoon Hannah and I went to our Cooking Club end of summer get together at Julie’s house.  Um, pretty sure I could do some serious damage in this kitchen. 😀

It was fun catching up with everyone.  We don’t meet in the summer and our next Cooking Club isn’t until October.  She had pizza, and everyone brought a side dish – salads, heirloom tomato salad, I made a pasta salad.  And Julie made a delicious cherry cobbler and Donna made these amazing almond cheesecake bites.  And I had some wine too.  I didn’t keep track of any points, so I am just going to say that all my weeklies are gone for the week and leave it at that.

I checked the weather this morning and saw that right around 1 p.m. the clouds will be rolling in so not sure I’ll see the eclipse.  My brother has traveled hundreds of miles to get in the totality path of the eclipse – fingers crossed that he sees it!

    It sounds like you did a little too much on Sunday for it to be considered a lazy day. You are also fighting off a cold so you need the rest. I’m always happy to hear you spending time with your Mom. I may have drooled a little on my phone when I saw your sirloin and spinach post on Instagram. Glad you saw a small loss at your meeting. Any loss or even maintenance is a good thing in my book. I’m hoping Charlie will document his eclipse experience on his blog. I love his blog too and can’t wait for him to return.

      He is going to write about it soon – he said it was so worth it! It was too cloudy in Chicago to see much 😛 I am feeling much better – decided to give myself one more day off from the gym tonight, but will go tomorrow to get back at it – hey a loss or maintaining is a win in my book!

      Me too! Although Hannah just shook her head thinking how messy I could make a kitchen that big – that was only half of it! 😀

    I don’t eat bread, but I am definitely trying the shake! I use premier protein – never thought of adding the coffee… I LOVE COFFEE!
