I know I’ve talked about these Joseph brand pita breads, but I absolutely love them.  The only thing is that next time I won’t try to stuff them – since they are only one point, they are thin, and when I tried to picked these egg white and romaine lettuce pita halves, they kind of fell apart.  I’m not mad about that though – at one point each, it wasn’t a big deal to eat this with a knife and fork.  When I put this on Instagram I posted that there were 6 slices of Canadian bacon in there.  

After I took the first bite I was like “I forgot the Canadian bacon!”  It was in my lunch bag, but I was already working, so this breakfast was only 4 points instead of 6.

It was warm yesterday and with the possibility of some rain, my sister and I walked through Macy’s, then through the Pedway.  She didn’t bring a lunch, so we stopped at a taco stand and while she got a taco salad (Jenn, forgot to ask you how that was!) I asked her to add a chips and salsa to accessorize my lunch.  

While this isn’t the prettiest lunch, it was plenty tasty.  Jennie-O turkey burger that I cooked before work, with 1/2 ounce provolone cheese, lots of German mustard, chips and salsa and cucumbers on the side.  This was 14 smart points and very filling!

I am loving the Max 30: Insanity.  Yesterday was Day 9 and it kicked my butt – so many lunges.  The 30 minutes goes by very fast.  While I was working out, I defrosted some shrimp and started water for pasta.

Jessica of How Sweet Eats posted a summer shrimp pasta dish that looked amazing.  The other day I grilled up all the corn I had, knowing I would use an ear of corn in this dish.   However her original dish called for 8 slices of thick cut bacon AND 1.5 cups of Parmesan cheese.  I knew that I could lighten this up.  I made this recipe for one serving, but you can double, triple it as needed.  

Skinny Shrimp Carbonara

Biz (inspired by Jessica of How Sweet Eats)
A super light summer pasta dish - all the flavor without all the calories of a traditional carbonara.  Ready in 20 minutes, so perfect for a busy weeknight dinner.

Ingredients
  

  • 1 cup cooked angel hair pasta
  • 1 large egg
  • 1 tablespoon shredded Parmesan cheese
  • 1 slice bacon chopped
  • 3 ounces shrimp
  • 1 teaspoon minced garlic
  • 1/4 cup corn
  • 1 small zucchini, cooked
  • 1/2 teaspoon crushed red pepper
  • 1/4 teaspoon cracked black pepper
  • 1/8 teaspoon salt

Instructions
 

  • Cook the pasta according to package directions, and drain, reserving 1/2 a cup of the starchy pasta water.  In a large skillet, cook the bacon until desired doneness - I am on team crispy!  Remove, cool and chop.   In the same pan, add the shrimp, corn, zucchini and garlic and cook, getting all that bacon goodness from the bottom of the pan.  
    In a large bowl, mix the egg and Parmesan cheese together.  Add your hot pasta to that bowl and pour in the egg/cheese mixture, and stir for 3 minutes - I did add another 2 tablespoons of the pasta water to that mixture, and before you know it, your pasta will be saucy!   Stir in the cooked shrimp/zucchini/corn mixture, the seasonings and toss until combined, garnishing with the fresh cut basil and the chopped bacon.

So even though this dish came in at 12 smart points, this was super light.  I finished eating around 8:30 and we were at the gym at 9:00.  I started out with the elliptical for 10 minutes, which I don’t like at all.  My feet get tingly on that machine, so as soon as the stairmaster was open, I jumped on that for 30 minutes.

Can’t believe that was three years ago already – I remember that day like it was yesterday.  I was trying to get a leave of absence from work, when Tony told me it would be stupid and for me to come home for the week while he was at St. Mary’s at Mayo.  He was so tired that I never actually talked to him that week, but would call the nurses station to check up on him.  That was the longest 5 hour drive home leaving him there.  I never would have thought a mere four months later he’d be gone. 🙁

On a happier note, thank you to everyone who wanted to send me their old fitbits!  Rachel, Maggie, Jill and Amanda – you guys are awesome!  But Rachel texted me first so I am happy to take her old fitbit.  THANK YOU!

Today is supposed to be stormy, but I’ll still try to get to the WW meeting today – I just love this meeting so much even though my new weigh in day is on Saturday.  Jenn, are you going today? 

Time to catch up on some blog reading for the remainder of my train ride into work today.  It’s Lolapalooza (sp?!) in Chicago for the next four days – I think they expect 100,000 people?  I took the early train this morning in case there were any hiccups, but so far so good.  Although I probably just jinxed myself by saying that.
