Thank you to everyone who commented, texted me, sent me emails about my post yesterday.  It means so much to me that you are not only in my corner, but lifted me up when I needed it.  This blog and the friendships I have formed both online and in person has enriched my life more than you’ll ever know – so THANK YOU!

When I woke up yesterday morning, the first thing I did was pull out my journal and plan out my day.  I grabbed more inspiration from Steve Weatherford on Instagram – “you can’t start the next chapter of your life if you keep re-reading the last one.”  So true!

I had a low point breakfast because I knew I was going out to lunch with a co-worker.  One egg (2), 2 ounces ham (2) banana and so sweet tangerines.

The place we went to is your typical Greek diner.  I remember eating here about 25 years ago when I first started working downtown.  But back then, not unusual for me to get a reuben sandwich, fries AND a slice of French silk pie. I chose the 1/2 soup 1/2 sandwich combo.  Tomato soup and the turkey sandwich (no mayo – ew!).  I counted lunch at 12 points.

I have a new post coming up soon on The Chopping Block’s website.  I was stunned when I looked back through my blog archives that I never made flour tortillas from scratch before!  Guys, these are so easy and delicious, even made from scratch on a week night.  I’ll link to the recipe soon, but you’ll definitely want to put this on your soon to make list.  You can leave the dough in the fridge for a week, then just make however many you need.  Or, you could cook them all up and freeze them – they’ll keep for a few months.  Just defrost in the microwave, or in the fridge overnight.

The best part is that these giant tortillas are only 3 smart points.  The possibilities are endless – I am thinking grilled pizza, breakfast burritos, and I have an idea for a mock apple pie that would come in at only 5 points for the whole thing – still recipe developing that one, but in my head it turns out really good!

As I was looking at this picture I realized that I need a manicure!  And a pedicure too.  Not that it’s flip flop weather, but knowing Chicago, next week will probably be in the 80s. 😛

My reset button is set.  I’ve got my food packed.  I am on my own walking this week – my sister is off work the rest of the week.  I forgot my Fitbit yesterday so I need to catch up on my weekly challenge.  I never know who much to manually add to my Fitbit.  I may just add 4 miles because I know I always get a minimum of 10k steps a day, even without my lunch time walk.
