I had no idea what to expect going into my WI yesterday.  My eats have been all over the map – still trying to figure out how to eat around my schedule.  So I was happy with the –1.6.  So I’ve actually lost 4.4 pounds in the last four weeks!

But in 16 weeks with the ups and downs, I am actually only down 1.2 pounds, but I still consider maintenance a victory.  Without my planned meals that are actually point friendly, I could easily have just given up and eaten like crap the whole summer.  It’s all good!  I brought my 3 point breakfast parfait:  1 container of plain Chobani, my 1 point fruit sauce, and a banana, which I ate during the meeting.

I still haven’t heard from Victoria Z who won my 8 year blog anniversary giveaway.  Do you think if I haven’t heard from her by Friday (one week) that I should just pick another winner?  Look at how cute my packaging is!

Hannah found those cute jar stickers on top at Hobby Lobby in the 50% off bin.  But they didn’t stick to the jars, so I put them on top with instructions to just add ricotta cheese and cooked noodles.

I made more lasagna soup than I needed to can, so that was my lunch yesterday.  I have to laugh because it’s probably batch #1001 that I’ve made since finding the recipe here.  Just look at how many times I’ve pinged back to the recipe!   But the original recipe is from Brenda of Farmgirl’s Dabbles.   I met Brenda at a blog event in 2013, and told her how many times I’ve made this soup.  So now whenever I post it I have to tag her on Instagram and I crack her up every time I link to her.

I got to work 30 minutes early so I could have this hearty lunch before getting busy at work.  I opted out of the cheezy goodness on the bottom, and instead used cheese tortellini and shaved parm on top.  This hearty bowl is 10 smart points and was super filling.

Then it was time to set up the grill!  Here is a list of skills the students learned in the hands on Beef on the Grill class.

Two Kalamazoo gas grills, three Big Green Egg’s, two Rosle charcoal grills and a pizza oven!  I can’t wait to work a pizza oven class.

There was a 30% chance of rain, so we put up a tent over the island just in case.  Luckily, it didn’t start to rain until we were cleaning up.

I put this next picture on Instagram.  I know I’ve talked about it before, but I use Photo Toaster to edit all my pics on the fly on my iPhone.   I paid $1.99 when it first came out, but now it’s up to $2.99, but still worth it in my opinion.

It was a ton of fun, the students were very eager to learn tips and tricks of grilling and I got to eat a beef kabob for my dinner that was leftover – it was a ginger and cumin spiced beef and pineapple kabob with red peppers.  So flavorful and delicious – I’ll definitely be recreating that one at home.

I was home by 11:00, but wasn’t tired yet, so I started watching America’s Got Talent Finale and then starting watching a documentary.   Before I knew it, it was 1:30 in the morning!  I need to tell myself that I should go to bed 30 minutes after getting home that late.  I didn’t get up until 9:45 this morning!  But it is my day off, and I will still be productive.  Did I tell you guys that I’ll be posting on The Chopping Block’s blog page later this month?  I am going to work on that today.  Hannah is off today too, so we may do some thrifting, laundry, etc.   I got in some decent steps yesterday, but today is definitely going to be a gym day.

Happy Humpy day – make it a great day!
