And there is nothing wrong with that!  As we got down to the tail end of the week, and after spending less than $30 for groceries this week, it was slim pickings.  I had some ground beef leftover, so I decided to cook that up and noticed I had 4 tostadas left in a bag in the pantry.  So beef tostadas were on the lunch menu.  It was getting closer to when I needed to leave, and I was stumped with breakfast.  I had exactly 5 minutes before I had to leave to make it to work on time, and seriously considered hitting McDonald’s up for an oatmeal.

But I know me too well – while my brain says “I’ll have oatmeal” my mouth would say “I’ll have a Sausage McMuffin with Egg and hash browns please.”  I could eat that for breakfast every day and never get sick of it.  So I did a quick peek in the fridge – asparagus, 2 eggs, cheddar cheese – breakfast tostadas!  While I brushed my teeth, I put two eggs and chopped up the asparagus and put it in a skillet over medium high heat with the lid on.  Pretty much when I was done brushing my teeth, the eggs were done!  Then I just threw shit in a bag and got the hockey puck out of here.

When I got to work, I divided the egg mixture between the two tostadas, put some Cabot cheddar cheese on it, and put it under the toaster oven broiler for a few minutes.  Then topped it with lettuce, tomatoes, jalapeno, cilantro and some of my baja fresh salsa.   So much better than McDonald’s!

It was an arm day for strength, and then I was hitting up the outdoor pool at the gym.  I can’t believe I am this far into summer and it was my first time out there.  Not gonna lie – it was a bit cold to start, but I quickly got used to it.  My arm exercises took me 20 minutes, and I swam for 30 minutes.  I was using my overtime on Monday to take longer lunches this week – I loved have an hour and 15 minutes for lunch.  I had time to just lay and soak up the sun for a bit too!

You can see my eyebrows aren’t that red anymore from the threading the other day.  And you’ll be happy to know I was wearing spf 50 sunscreen!

Lunch was beef tostadas – same deal with breakfast only beef instead of eggs.

I never ended up making the Cincinnati chili this week, so Tony picked up a whole chicken for $6.  I ended up butterflying it, then drying the bird really well.  I melted 2 tablespoons of butter and brushed the bird with the butter, then added a touch of garlic salt and chopped rosemary.  So simple and delicious.  Tony and I sat outside until nearly 8:30 – the chicken cooked low and slow on the Weber.  God I love summer!

So delicious.  I froze what we didn’t eat and will make soup when we get back from Mayo.

So here’s a weird thing.  Our computer is in the back of the house and the room has windows that look out into our back yard.  I don’t know if we had big storms last night (I sleep like the dead) or what, but one of our trees is down in the back yard – it’s huge – not sure you can tell in these pictures though.

It took off some branches too of trees that were in its path on the way down.  I am not sure we’ll have time to chop it up before we leave – that’s one good thing about living in the sticks, it can stay like that until we get back if we have to.  That’s probably the 5th tree we’ve lost in 14 years! 

I am off to do some laundry, then pack a bit.  Louise, you’ll be happy to know that I am using one of the cards you made to give to the happy couple today!
