Over the weekend Tony and I stopped by Caputo’s to pick up prosciutto.   If you’ve never been to Caputo’s in the Chicagoland you have to check out their produce section and their deli.  It’s pretty amazing.   There is always a huge line at the deli, but it’s worth the wait.  While I was waiting for my turn, I saw this hot capicola and decided I had to have it.  This meat is like butter it’s so tender and delicious.  While driving home Tony had the idea of me making breakfast cups in my muffin tin with the capicola – genius!

So I finally went to Dick Pond over the weekend to get fitted for good shoes.  They had me get on a treadmill and actually videotaped me walking and running.  Turns out one foot has supination and the other pronates.  These are words I didn’t really knew existed.  Bottom line was that I needed to get “stability” shoes to help with both feet.  I ended up buying a pair of Brook’s – a shoe I never bought before.  Luckily I was using gift cards I got for Christmas – I don’t think on my own I would spend $109 on a pair of shoes, but I know it’s worth it.   As a total coincidence, my blog friend Catherine bought the same pair of shoes over the weekend – she’s found them at DSW for $70 – when these wear out, I’ll have to check that out.

As luck would have it, while walking into the office yesterday, I completely slipped on ice that was outside our front door.  I landed on my left knee and side – and of course when I walk into the vestibule there are THREE bags of unopened salt, so I quickly got it salted so no one else would fall.  I ended up just walking 2 miles to break in my shoes and not put too much pressure on the knee I fell on.

Over the weekend I made Tony one of his favorite soups – navy bean soup with smoked ham hocks.  I left it simmering when I went to the restaurant on Saturday night.  Later that night Tony texted me and said “I just had a bowl of soup – it was awesome!!”  Two thumbs up.  Only one slight problem.  It kind of looks like dog food in a bowl, but trust me, there was some great flavors going on here.  I didn’t really follow a recipe – just started out with carrots, celery, potatoes and garlic.  Then added two cans of drained navy beans, 6 cups of chicken broth, and then three smoked ham hocks.

On the side I had a serving of these flat bread crackers – I am on the fence with these – some were really salty.

It started snowing really hard and our office ended up closing at 3:30.  My normal 35 minute drive home took me an hour – some parts were pretty slippery and slushy.  Yesterday’s snow pushed us into the 5th snowiest winter in history!  Gah.   I ended up making us some more prosciutto wrapped cantaloupe as an appetizer.  Tony didn’t have a taste for any of my menu ideas, so he ended up having a salad and I made . . . wait for it . . . PIZZA!

While the stove got to temperature, I decided to do the T-25 workout before dinner.  I have to say, I missed me some Shaun T!   Last night was Cardio – I have to say, I love the count down clock because believe it or not, even though there aren’t any breaks for 25 minutes – it was over before I knew it.  I like that the equipment needed?  NADA!

Note to self:  clean your desk!

I used the second half of my sourdough bread.  I par-baked the dough on my pizza stone at 450 for about 7 minutes.  Took it out of the oven, put my toppings on it (sausage, pepperoni, baby spinach) and finished it off on the bottom rack for about another 9-10 minutes.  This crust was awesome.  It was thicker than thin crust, but had such a great crunch to it.

I had two slices of this.  I think I could eat pizza every day and never get sick of it!  And later that night, Tony and I each got a snap-chat from my step-son Joe.  He likes to rub his Austin weather in our faces – especially this winter!

Alright, I am off to shovel before work and still have to put my food together for the day.  Tonight’s T-25 is Speed 1.0 – can’t wait to see what that one is like!  Make it a great day!
