I loved reading that a few of you would have even tried the goat meat at the restaurant we went to the night before last – I don’t think I am that adventurous . . . yet.  Although if I was with someone who ordered it, I might try a bite!

Two people gave me links to hot crab dip recipes, and both sound amazeballs.

Peggy sent this recipe to me via facebook – I love that it has artichokes in it because I love artichoke dip and what better than to add crab?!  Thanks Peggy!  How delicious does that look?  And it’s low carb if you use veggies for dippers. It’s so sad that I never really even tried seafood until I was in my 30s.  Growing up we’d have summers in Virginia, newspapers on picnic tables with bushels of blue crabs and I stuck my nose up to it – such a waste!  No worries though, as I am making up for lost time. Open-mouthed smile

So after my indulgent, 1100 calorie dinner the night before, I reigned it in and had a green monster smoothie.  Now, you need to pay attention to what you put into these smoothies, because these can still be a calorie bomb.

  • 1.5 cups light vanilla soy
  • 1 container Chobani yogurt (mine was mango)
  • 1 frozen banana
  • 1 tablespoon of peanut butter
  • 1 tablespoon of honey
  • 2 cups of baby spinach

Total:  484 calories, 17 fat, 53 carbs, 7.4 fiber and 32 protein

While this is high in carbs for me for breakfast, it has so much other stuff going on, that I can have this a couple times a week – 190% of Vitamin A, 64% of Vitamin C, 39% of calcium, 23% iron and 30% of your daily fiber intake.

Plus it’s delicious, even though I can’t get Tony to try one!  He’s always joked that if he even tried to drink one, he’d have to drink it over the toilet because it would probably go right through him!

It again was only 72 degrees yesterday, but now that I know that my body will get used to the cold pool within a couple minutes, I cannot tell you how refreshing this is.  How lucky am I that I get to swim outside on my lunch break?!  40 minutes done and done.  I kind of look like I have to take a shit in this picture, but I assure you I was just chilly getting out of the water. I made a quick stir fry for lunch yesterday – literally 10 minutes before I had to leave the house I was like, I can make it!  It helped that the noodles were already cooked.  It was 3 ounces of chicken breast tossed in a bit of corn starch, carrots, broccoli, water chestnuts.  The sauce was sriracha mixed with this stir fry sauce that’s been in my downstairs fridge for who knows how long – it was still good though!

When I got home from work Tony was mowing the lawn, so I started making dinner.  I love chicken thighs but they take longer to cook than chicken breasts, and the last couple times I’ve slightly undercooked them – just ew.

Because the thighs are higher in fat, I decided to cook them on top of a rock over a cast iron skillet so that I wouldn’t get any flare ups.  It worked out perfectly!

It was when I took this picture that I realized “do I forget that there are only two of us for dinner?”  We each ended up only eating one piece of chicken, so I think I’ll take the meat and make it into a soup over the weekend.

I ended up making a mustard bbq sauce.  While I love the Rudy’s bbq sauce, its really Tony’s favorite, so I want to ration it as much as possible.  And, turns out, I love all things mustard!

Horseradish Mustard BBQ Sauce

  • 12 servings – about 1.5 tablespoons each
  • 35 calories, .5 fat, 6.5 carbs, .65 protein

Mix together:

  • 3/4 cup horseradish mustard
  • 1/4 cup balsamic vinegar
  • 3 tablespoons brown sugar
  • 1/2 tablespoon smoked paprika
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon black pepper
  • 1 teaspoon hot sauce (I used buffalo Tabasco)
  • 1 tablespoon ketchup
  • 1/2 teaspoon celery salt

Mix together and store in a mason jar.

I know it kind of looks like peanut butter in a jar, but trust me, this has a lot of flavor going on.  You can taste the kick of the horseradish and the tang of the balsamic, and of course, the mustard flavor is the star of the show.

An hour after dinner it was time for Day 15 of Insanity.  Now I know I am about 4 days behind, but I am totally okay with that.  It might take me 65 or 70 days, but I’ll finish it!  My step-son Joe apparently likes to check on Instagram to see my sweaty pic of the day!  He told his Dad he was proud at how I’ve kept up at it!

I got a couple emails from readers asking me if its gotten easier to do, and the real true answer is not really.  However, I am able to complete more of the exercises, and I’d say I am consistently able to do 90% of the exercises – the other 10% I modify.  My belly keeps getting in the way of doing side plank obliques!
