Over the weekend I scored on peppers – two big packages for $1 each!

I grilled the peppers first, then grilled my cherries for my salsa.  I wanted to make a pepper and potato soup for the week – its so easy and 1.5 cups is like 100 calories.  I packed up my breakfast and lunch, put all my shit in the car and went to work.  There’s construction on the road I normally take, so I had to take the back roads, which are kind of hilly.

I was half way to work when all of a sudden I was like “why the hell do I smell roasted peppers?!”  Fuck.  My ziplock bag full of soup fell over, and with every hill up and down it poured all of the soup under the front seat of the drivers side – like 2.5 cups of soup!  In the rental car since we still haven’t found the right car for me!

When I got to work I ran in and got some carpet cleaner and spent 15 minutes cleaning it up. Sad smile   I was thinking “this is a shitty way to start a Monday!”  And then I thought of what my husband had to go through during his cancer surgery and recovery, and what my brother is going through now with his Bob Hoskins Linoleum, and suddenly spilt soup wasn’t a big deal.

My boss was leaving on a business trip yesterday morning.  I usually settle in to work, check email, etc. then make my breakfast and eat around nine.  But with my soup clean up I hit the ground running, and by the time I ate my breakfast bagel it was nearly ten, so no picture was taken because I was hangry!  476 calories, 8 fat, 55 carbs, 2 fiber and 41 protein.

By the time I got my boss out of the door it was nearly 1:30.  I had a couple errands to run, and had to pick up lunch since I didn’t have anything left but an apple.  I went to a Chinese restaurant to get some beef and broccoli.  It’s never a good sign when a place is stone cold empty when you walk in, but I spun the lunch wheel.  The Chinese man behind the counter asked “sweet and sour, manchow or sweet corn?”  I was like “what are you asking me?”  He said louder “sweet and sour, manchow or sweet corn?!”   I didn’t realize the lunch special came with soup – so I said “the middle one.”  He shouted “Manchow!” and hurried in the back yelling “ten fifteen minute!”

When I got to work I opened the soup container and it was a slightly thick beef broth with veggies and it was SO very spicy.  I have never even heard of that soup before!  I added 1/2 cup of the cooked rice, and had 1 cup of the beef and broccoli on the side.  The beef was tender, the broccoli was tender crisp – and they made it spicy for me!  So customers or no customers, I’ll be back!

Lunch comes in at 536 calories, 14 fat, 73 carbs, 10 fiber and 32 protein.

When I came home from work Tony and Eddie were hanging outside.  I swear our dog smiles when he’s outside.  He’s too old to catch the bunnies and squirrels but I think in his mind he still thinks he can. Sad smile

The one good think about Tony liking skinny meat now?  It’s dirt cheap!

My plate, with leftover orzo salad from my work lunch last Friday, that I added some chopped baby greens with.  Dinner comes in at only 318 calories, 17 fat, 21 carbs, 3 fiber and 20 protein.

I didn’t get a workout in, but plan on a lunch time bike ride today.
