Happy Halloween and Chicken Sausage Gumbo

Every year my office dresses up for Halloween.  In 2009 I went as Julia Child. I walked around our office saying “Bon Appetit!”  In 2010 I went as Paula Dean.  I handed out goodie bags and I said “love and best wishes from my kitchen to yours!”

This year?  I am going as:

Yep!  Guy Fieri.  We are grilling out and I am making thai burgers – you’ll just have to come back tomorrow for my costume and the recipe for this burger which is out of this world!

I was bizzy in my kitchen yesterday as usual.  I have to show you the size of the .99 cent a pound chicken breasts I got – I put an 8 x 11 sheet of paper behind these chicken boobs so you can see how big they are!

I’ve never made gumbo before and decided to make that for dinner last night.  Can I just say that I had no idea some recipes called for up to 1/2 cup of oil to make a roux out of?  So I combined several healthier recipes and came up with my version.

Chicken and Sausage Gumbo with Rice (4 servings without the rice: 268 calories, 6 fat, 20 carbs, 2.2 fiber and 32 protein – or 7 Points). 

  • 1 teaspoon oil
  • 1/4 cup flour
  • 3 cups chicken broth
  • 1 pound boneless, skinless chicken breast, cut into bite size pieces
  • 6 ounces diced smoked kielbasa
  • 1 cup new potatoes
  • 1 cup carrots
  • 4 cloves garlic
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon oregano
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt

Sprinkle 1/2 teaspoon of pepper and 1/2 teaspoon salt over chicken.  Heat oil over medium heat and stir in flour.  Cook, stirring constantly until the flour begins to brown.  Slowly stir in all the broth and using a whisk, cook for 2 minutes.  There shouldn’t be any lumps (I did have to remove a few lumps of flour that just never incorporated).

Throw everything but the kielbasa in the pot, and simmer for 20 minutes.  Add the sausage and simmer for 20 minutes more.  Serve over white rice.

My broth never really thickened up as much as I would have liked – Tony and I both considered this more of a gumbo soup, but we liked it.  I’ll have to try again on another gumbo recipe – if you have one to share, please do!

With 3/4 of a cup of rice, dinner came in at 10 points.

Mini Cherry Cheesecake, BSI is Back and Holiday Challenge Update

So I was a bit discouraged at my WI yesterday, but guess what?  I weighed myself today and I had a loss of 2.6!  Just goes to show that you can’t always count on your weigh ins to show up when you want – hope that last sentence makes sense!  So we’ll see how that translates at next weeks WI.  So how was your week?

Here is a new product find – Tony found it when we were grocery shopping – they are delicious and 14 crackers comes in a serving. 😀

I also got two bags of chicken breasts – 20 pounds for just under $20!  Sweet!

I did a quick inventory of my pantry – I’ve had this can of cherry pie filling for probably a year?

The stats are pretty good too – 35 calories for 1/3 cup:

So I was thrilled when I found this recipe.  My changes are in red below.

Makes 12 – each one is 116 calories, 4.6 fat, 15.6 carbs, .4 fiber and 3 protein – or 3 points plus.

3/4 cup(s) graham cracker crumbs
2 Tbsp light butter, melted (I used real butter)
2/3 cup(s) low fat cream cheese
6 Tbsp fat-free cream cheese
3 Tbsp fresh lemon juice
2 large egg white(s)
1 1/2 tsp vanilla extract
1/2 cup(s) sugar
3/4 cup(s) light fruit pie filling, cherry (I used no sugar added pie filling)


Place 12 cupcake liners in a cupcake pan. Preheat oven to 375°F.

In a small bowl, combine graham cracker crumbs and butter; mix well. Spoon 1 tablespoon of crumb mixture into bottom of each liner and press down gently (I used a shot glass to push the crust down); refrigerate until ready to use.

In a medium bowl, using an electric mixer, beat both types of cream cheese until fluffy. Add lemon juice, egg whites, vanilla extract and sugar; beat until smooth.

Spoon cream cheese mixture evenly into muffin liners; bake until set, about 15 minutes (mine baked for 20 minutes). Remove from oven and allow to cool.

Top each cheesecake with 1 tablespoon cherry pie filling (I somehow got 2 tablespoons of pie filling from the 3/4 cup) . Yields 1 cheesecake per serving.

These are a winner people!  You would never know that these are 3 points each – and this is a nice make ahead dessert for Thanksgiving or Christmas. 😀

I also scored because roma tomatoes were only .69 cents a pound so I made salsa so I can make crock pot chicken salsa this week.  Love the char!

It was a gorgeous day – our front yard tree is so pretty now – in a week the leaves will probably be all gone. 🙁

I also smoked a rump roast last night – it turned out so good!  I plan on using the leftover meat to make beef and barley soup. 😀

So I am bringing back BSI!  It’s wierd because I got about 10 emails in just the past week asking if it was coming back.  I stopped it with the summer challenge, but decided to bring it back.

Weekly Weigh In and Sushi!

Even with all my exercise this week, I still had a gain on the scale.

I am going to chalk it up to the Japanese food I had yesterday for lunch.  (and maybe I had a bit too much fried food this week?! :D) Tony had a friend in town and we met him here.  It’s literally five minutes from my office.

Um, I did not get Japanese noodles with ketchup – ew!

I ordered something different – it was a cold soba noodle dish – it had a vinegar dipping sauce that had stuff you could add to it – like radish and wasabi.

I ate about half of the noodles, and all of the tempura – so light and crunchy!

Tony and his friend did full metal jacket sushi – the piece on the far left is Tony’s favorite – fatty tuna!

It was nice getting together with Tony and his friend for lunch!  And it made my afternoon go by really fast – it’s so sad that its almost dark by the time I get home from work already:

I have planned for me and my SIL – blackened chicken wraps, crock pot chicken salsa, beef enchiladas and shrimp korma, to name a few things.

And I think I’ll put the deep fryer back in the basement this week!
