I am addicted to breakfast pizza!   The base of this pizza was 1/3 cup of my marinara when I had my asparagus ravioli earlier in the week – I added zucchini and chicken sausage to the base.

Topped with spinach, 1.5 ounce mozzarella cheese and 1 egg.  Bake in 425 degree oven for 15 minutes, or until egg is set.

Done!  Jenn and I still think it’s weird how the egg still looks raw!

I added hot sauce and fresh basil after it came out of the oven.  This whole pizza tipped in at 675 calories, but I ate 3/4 of it.  Believe me, it was very hard to give the dog the last piece!

Then it was off to twinfest!  My sister Jenn and I:

And we always get pizza when we get together!  😀  I had three squares of sausage pizza.  Our hostess had no hot sauce! But she did have chopped gardinera, so I put that on my slices.  Lunch comes in at: 465 calories, 57 carbs, 26 protein, 15 fat and 3 fiber.

So while I had planned on making blackened chicken pizza for dinner, I – for once – was not in the mood for pizza!!  Tony was having chicken wings, so I jumped on that bandwagon.  Dinner comes in at 550 calories, 12 cabs, 42 protein, 33 fat and 1 fiber.

I used about 2 tablespoons of this for 10 wings total - I had 5 wings

After dinner I took Ed for a short walk – it was rainy/foggy/chilly 🙁

So it’s no shock that my grade for Saturday was a C+

Total for Day: 1691 calories, 164 cabs, 99 protein, 71 fat and a measly 8.4 protein

I decided that for every 50,000 page views I’ll do a giveaway as a thank you for everyone who takes time out of their day to see what goes on in my life – I really appreciate it!

While my menu planning is a bit plain this week – my lunches are going to be stellar!  The lovely Sophia gave me some wonderful tips on making a Korean Tofu Spicy stew that I plan to make.  Also on the menu?

  • Low fat spinach dip with pita chips and fresh vegetables
  • Alison’s soba peanut chicken salad
  • cauliflower grilled cheese sandwich with cauliflower soup
  • soon dubu tofu stew with brown rice
  • macaroni and cheese soup with buffalo chicken bites (really can’t wait for this one!)

My only unusual breakfast is this girls Personal Tortilla Quiche. Our dinners are just using up meat that’s in our deep freeze, I’ll have to see how I can jazz them up using what I have on hand.

Plans for today?  A trip to Bed, Bath & Beyond for new sheets and to buy a shower gift.  Lunch out with Tony :D, laundry and cooking!!
