Yeah, that’s right.  My sweater won most disturbing in our office ugly sweater contest!  What would be even more disturbing is if I were 42, living in my Mom’s basement with lots of cats 😀

And the valuable prize I won was I appetizer tray with a knife that lights up:

I had an idea about breakfast that I wasn’t sure would work or not.  I took a leftover serving of my broccoli gratin and put it in an oven safe 4 inch round ramekin.  I then poured 1/2 cup of egg beaters on top, then sprinkled with parsley and crushed red pepper and baked it for 20 minutes at 350.

This was so good!  It almost tasted like a cheese souffle!

Not bad for 6 points!

On the side I had one of the grapefruits my MIL sent me.   I put 1/2 teaspoon of honey on top of each cut grapefruit and then put it under the broiler for 5 minutes.  The heat releases the juices and the honey melts into the grapefruit – kicks it up for 1 extra point.  Breakfast Total:  7 PointsPlus.

I was really sore from my on Demand exercises I did on Sunday and didn’t think my legs were ready to run.  I decided, just get on the treadmill, if it doesn’t work out, just do the elliptical.  I did my customary warm-up, and instead of doing my run/walk, I told myself “see how long you can run without stopping.”  I made it about 10 minutes before I needed to stretch my calf muscles, but only rested and stretched for 30 seconds.  Once I started back running, my mantra was “I can do this!”  Guess what my 5k time was?????  36:25!  A new PR! It amazes me that I can run that time at 170 pounds 😀

I forgot to reset the clock after my warm-up, so my total time was 41:25, and then I ended up walking the rest for 45 minutes total.   Boy was I hungry though when I got back to work!  On the menu:  1 serving of my pasta fagioli (6 points), a Rachel sandwich which was 3 ounces of leftover turkey breast, 1/2 cup sauerkraut, 1/2 ounce of Gruyere cheese, a 1.3 ounce whole wheat dinner roll with jalapeno mustard (7 points).  I also had two clementines on the side.  Lunch total:  13 PointsPlus.

Our cookie exchange went well – I plan on dividing these up for our neighbors treat bags.

Earlier in the day I talked to Tony.  Since I did my grocery shopping on the fly, I had “ideas” of meal plans, but wanted to know if he had a preference.

Biz: “So I was going to run some ideas about dinner tonight.”

Tony: “How can I possibly think of dinner when I haven’t even had lunch yet.”  Go ahead and make whatever you want.”

Taco Fiesta! My next favorite meal to make right after pizza.  I got home, started to brown the ground beef and Tony walked into the kitchen, looked at the pan and said “Fiesta?”  Yep!

My plate: 2 corn tortillas, 3 ounces of 15% lean taco meat, 1 ounce avocado, 1 tablespoons light sour cream, 1/2 ounce cheddar cheese, romaine lettuce and diced cucumber – with Taco Bell hot sauce.  Dinner is 11 PointsPlus.

Since the Bears game was on last night, I spent some time in the kitchen finishing up my gifts for the women at my office.  I scored on some really cute crate and barrel glass snowman mugs at a garage sale over the summer – I got a box of 8 for $5!  My plan was to make homemade Hot Cocoa Mix.  I have to give credit to Brown Eyed Baker for this recipe – it is hands down the best cocoa mix I’ve ever made!

Hot Cocoa Mix

Ingredients

3 cup(s) nonfat dry milk
2 cup(s) powdered sugar
1 1/2 cup(s) Hershey’s Cocoa
1 cup(s) white chocolate chips

Instructions (she added 1/2 teaspoon of salt which I omitted, but feel free to add it)

Mix dry ingredients until combined in food processor. Add chocolate chips and pulse until they are finely chopped.
Use between 1/4 to 1/3 cup cocoa mix to 8 ounces of hot milk.
The 4 points is based on 1/4 cup mix.

I highly recommend Ghirardelli unswettened cocoa - it's only $1.50 more than Hershey's and its so much better

I measured out 2/3 cup of cocoa mix in a baggie, then topped it with mini marshmallows.   Here’s how it looks all wrapped up – I also added a scratch off lottery ticket to each one 😀
