No, I am not talking about Hannah – I am talking about me!  It doesn’t happen very often where I get a cleaning jones, but yesterday was one of those days.  Do you have a place in your house that ends up being the dumping ground?  Well, that was our back room.  It has a t.v., my comfy chair, our computer and . . . stuff.  Canning jars, step stools, kitchen appliances, paper work – and over time the piles get just a little bit bigger.

The rest of our house is pretty much always company ready, but I decided to tackle the back room.  And really, it only took me a couple hours, and that included cleaning out the pantry – Hannah was so proud of me when she got home! 😀

I was able to bring some of the leftover pancake mix from our office breakfast – two were plenty.

Tony and I went grocery shopping, then he looked at me and said “The Texan?”   It’s a funky bbq place – its looked exactly the same the 10 years I’ve been going there.

And while they have amazing pulled pork, rib tips, etc., I was in the mood for a burger – the Western – hot spicy bbq sauce over a bacon cheeseburger with jalapeno peppers.  The lighting sucks ass, so this is the best I could do – loves me some jalapenos!  I ate 2/3 of the burger, 1/2 cup garlic mashed potatoes and about 1/4 cup of baked beans.

The meat specials at our grocery store were incredible!  Chicken legs for .39 cents a pound?  No brainer!   I decided to make buttermilk fried chicken legs.   I don’t have a real recipe, I just take 2 cups of buttermilk, and season it with salt, pepper, paprika, cayenne pepper and some splashes of Frank’s hot sauce.

Some recipes call for an overnight soak, these soaked for about 6 hours.

And while the fryer was getting to temp (325) I double dipped my chicken – I put 2 cups of flour in a ziploc bag, then added the same seasonings to the flour except the Frank’s sauce.  I went from the buttermilk, to the flour, to the buttermilk back into the flour.  I let them sit for about 10 minutes before putting them in the fryer – this way the batter stays on.

I also made macaroni and cheese – I knew Hannah had a short time between her work schedule and a babysitting gig – turns out she had to work late and went straight to babysitting – she’ll be eating the leftovers 😀

My plate: one chicken leg with Frank’s hot sauce and 1/2 cup mac n cheese.  The chicken is mouth watering good – the crunch from the batter, tender and juice on the inside – yum!

  • 1303 calories, 131 carbs, 64 protein, 62 fat and 8.5 fiber
  • 41% of calories from fat (not a shocker there!)
  • no exercise – so I’ll have to do some today 😀

Hannah and I are going to hang out today – she’s been working and studying so much I hardly see her!

We are going thrift store shopping and then out to lunch – can’t wait!
