First I want to thank you for all your wonderful comments about Hannah’s essay – seriously, she gets all the credit for the person she turned out to be – sometimes I wonder “did she really come out of me?” 😀

Yesterday morning I put together my chicken tikka masala for lunch, and I spent so much time on that, that as I was leaving the house I was like “I didn’t bring anything for breakfast!”  So I give you what you can throw into a bag in 20 seconds!

this was actually pretty filling!

I went to the gym at lunch and did 40 minutes on the elliptical and did 5 minutes of abs on the ball.  Could not wait to eat lunch!

I normally use jalapeno peppers to spice up the sauce, but I had this pepper:

holy shit is this hot!

I had no idea what it was because I bought an unmarked package of these at the store for .54 cents.  Tony looked it up and its called an Aji Amarillo – I only used four small slices for my sauce and that was plenty of heat!

I hate meatloaf. I love burgers, but for some reason, I am not a meatloaf fan, but Tony loves it.  So dinner was His and Hers.

His:

I sauteed mushrooms and added them to the meat mixture
wrapped in bacon
ketchup on top
baked at 375 for 50 minutes - this is a 1 pound meatloaf
the ketchup almost carmelizes the bacon so its nice and crisp - he loved it! 😀

Hers:

spinach, red pepper, 2 ounce beef, 1 ounce cheese quesadilla

I used low carb wraps that were 60 calories each, 11 carbs, 7 grams of fiber each – I can never get my insulin right using low carb stuff, and sure enough around 9:00 p.m. my blood sugar was 58. 🙁  So I had a peanut butter cookie! 😀

I have Mary to thank for my new recipe/menu binder!  I don’t know about you, but have torn out recipes everywhere, printed out recipes in my bag, on my desk at work and by our computer at home – I even have some taped on the inside of my kitchen cabinets!

The pockets hold recipes that I want to make.  Have you ever gone on a food blog and thought – I want to make that!   Only to forget where you found it?  In the middle of my binder is where I keep my notes now.  And starting this weekend, I’ll be using Mary’s weekly planner – I like that she has a spot for working out too!

I want that!
