Day 1 of 101!

Big storms came through this morning, so I had to keep the computer off – the sun is out now! 😀

Can you even believe it’s Memorial Day already!  Seems like we were just celebrating Easter!  I am so happy that so many people have decided to join my 101 Days of Summer Challenge – I am hoping this will light a fire under my ass to MOVE!

In no particular order. . . . the participants!

Debbi at Debbi Does Dinner Healthy.  The first time I went to her blog, I immediately put her on my blog roll – she does normal, healthy meals – each around 500 calories.  In fact, she’s got a buffalo chicken and potato dish that has been on my list of things to make soon!

  • track calories daily
  • ultimate goal is to lose 40 pounds by the end of the year

Brooke of Brooke Not On A Diet.  With the help of Weight Watchers, Brooke has already lost 100 pounds and look fantastic!  You can see your “victory log” here.  I love that idea!

  • get out of BMI range of obese, by losing 21 pounds

Helen at Doing a 180.  I love Helen – she started her blog out so anonymously, which is fine, but I love how open and honest she’s become!  And she has a beautiful 20 something daughter and a husband who just threw her an awesome 50th birthday party! 😀

  • Weekly:  Track food, even on days when she’s “relaxing.”
  • Consume no more than 11,700 calories during the week
  • Burn at least 2500 calories through exercise
  • Entire challenge – lose 8 pounds and do one road race!

Allison at And Miles to Go.   I am new to her blog – she’ll be 30 years old in a year and a half and wants to be the best shape she can be in by that time!

  • Ultimate goal to lost 10 pounds during the challenge to be in a healthy BMI range
  • kickboxing 2 times a week and run 2 times a week
  • Log calories every day (I thought it was funny when she wrote to me and said “If Biz can take a photo of everything she eats, the least I can do is write mine down!”

Rachel at Losing It!  She and her boyfriend Dave have decided to lose weight together to support each other.  She’s gone down 2 pant sizes since January – you rock sister!

  • Strength train 3 times a week
  • Cardio 3 times a week
  • water fitness class 1 x week
  • track food and stay within Weight Watcher allotment
  • lose 20 pounds
  • be in a size 16 pants
  • hold a plank for one minute (that’s hard!)

She’s already lost 37 pounds! Way to go Rachel!

Ren. Ren is a long time reader and does not have her own blog, but could not be more thrilled about this challenge.  She emailed me and said “my 101 days of summer game face is on!”

  • Not eat out of the office candy jar for 101 days
  • track food for 101 days
  • work out at new gym 3 times a week
  • ride her bike and/or roller blade 2 x a week
  • lost 15 pounds in 101 days
  • Weight: 171, Waist: 31″, Hips: 41 “, Chest: 38″, Thigh: 26′, Arms: 14”

Beth at 990 Square Feet.  Not only do I like her because we share the same name, but she is an awesome cook and an even better cake decorator.  Check out her 4 year wedding anniversary pictures – beautiful!

  • she plans to set “fresh” workouts and try new activities this summer

Veronica of Recipe Rhapsody and Going Down.  She is a fellow insulin dependent diabetic.  I just made her crock pot refried beans and am about to make her 7-layer dip for our Mexican fiesta later today – Veronica – the beans turned out so creamy!!

  • Lose 15 pounds
  • Do 30 minute aerobic sessions 3 days a week
  • Strength train 3 days a week.

Christina of Dinner at Christina’s.  Not only do I love her recipes because they have normal ingredients, I’ve actually had the pleasure of having a blogger pot luck at her house last year!  And I scored and brought home some of her dad’s amazing homemade sausage – hands down the most flavorful breakfast sausage I’ve ever eaten!

  • lose inches – she isn’t concerned so much what the scale says, but would like to lose inches by moving more – whether it be a DVD, bike ride or walking her dog, she vows to move every day!
  • Arms: 11″, Chest: 34.5, Waist: 25.75″, Hips: 41″, Thighs: 22.5″, Calf: 14.5″

  • getting active by doing her own personal triathlon – walking, biking and swimming

Leslie of Something Brilliant is Brewing.  She’s been a long time reader of mine.  And although she has knee problems, she still tries to get up and moving.  Her blog is bold and honest and a great read as she continues to make herself a better person.

  • exercise 30 minutes at least 5 times a week
  • lost 10 pounds in 101 days

Shelley of My Journey to Fit.   What can I say about Shelley?  Oh, that we are blogging best friends and pretty sure if we lived next door to each other we’d be awesome exercise buddies too!  She’s lost so much weight – 100 pounds and is still trying to wrap her brain about wearing size 8 clothes!  I have been loving her Friday fashion posts – she loves dressing up now! 😀

  • To run 8 miles without stopping.  Oh, did I tell you she’s signed up for a half marathon in November – and she only just ran her first 5k this year??!!  Woot!

Jenn at Slim-Shoppin.  I just recently found this girls blog.  Kidding! Jenn is my twin sister!  We both lost our initial weight in between 1999 and 2000.  We both kept our 70 pound off for years, until she had her third child (who is now 8, so she can’t say its baby weight anymore) and I started taking insulin.

  • Wants to be a size 12 in 101 days
  • wants to do P90X at least three times a week

Angie at Losing It and Loving It.  She’s already had quite a success by losing 82+ pounds – and it all started with giving up soda, and then adding good habits a little bit at a time.  And she lives right by me – we need to do a blogger walk together soon!

  • Minimum of 5 days of exercise per week
  • run 4 times a week
  • 100 stability ball crunches every day
  • stretch after each run!

Tricia of Fight Fat Phobia.  Oh my gosh, where do I start with Tricia – she has a super smart wit and not a post goes by that she doesn’t make me laugh out loud.  She recently had a weight loss challenge at work and lost 8% to win all the loot – almost $200!!

  • wants to lose 30 pounds in 101 days
  • fit into jeans she already owns
  • exercise a minimum of 2 times per week

Errign of 365 Days.  First of all, I love her name (pronounced “Erin”).  Second of all, she goes on long bike rides and likes to show the pictures of all her bruises all with a huge smile on her face!  In the winter you’ll most likely see her skiing with her boyfriend and Dad.

  • lose, not gain
  • do one thing every week that makes her happy (most recently Thai food!)
  • Run 5 miles per week
  • Bike 10 miles per week

Kalli of Fit and Forty Something.  Holy shit this woman is a rock star – she and her hubs just biked 45 miles over the weekend!  And while she is fit, she does have a goal!

  • increase her workouts, just kicking it up another notch!

Nicole at Prevention RD.  First off, she and I went to the same high school!  I am going to pretend that she graduated some 15+ years after me though!  She is a diabetes specialist registered dietitian, and I have seeked out her advice on more than one occasion!

  • Run 1 mile at least 70 out of 101 days
  • keep up with the speed of life!
  • make the most out of each day both mentally and physically

Brooke at Famished to Fantastic! I just recently discovered this blog – I think when Nicole wrote about the challenge, she found me!  For the life of me I can’t seem to find her email to me so I apologize in advance for not knowing your first name! She is overcoming an eating disorder, and has a 3 year old daughter and just found out she’s 7 weeks pregnant!  So exciting!  Please email me again so I can add your first name! 😀

  • walk 30 to 60 minutes 5 times a week
  • strength train 2 -3 times per week

Robin at Running Circles Around Turtles.  She is a fellow diabetic, but thankfully not on insulin.  She controls her diabetes with diet and exercise.  And has become an avid runner!  She’s training for a marathon!

  • keep on track with the group marathon training

Robin Sue of Big Red Kitchen.  I’ve been reading her blog for about a year and a half, and also feel that if we lived next door we would be bffs!  She is so creative with her kids, and has the best ideas about hosting parties.  Oh, and her photography is to die for – you just want to reach into the screen and eat everything she makes!  And I love the stories about her “Ma!”

  • 3-4 days of cross-fit
  • power walk 3 miles 3 times a week

My Mom!  Yes, my mom, who is about to be 70 years old in September is joining the challenge!  Unfortunately for my Mom, she’s extremely short – like 4 feet 9 inches short!  When I look at pictures of her when she was pregnant with me and my sister, I don’t know how she did it – don’t think she saw her feet for six months!

  • her goal is to lose 5 pounds in 101 days

Sarah of Hoge Runs – And Eats!  She is such a cute 20-something gal who loves to run – and get this. . . she’s training for a 50k race!  Holy shit that is hard core! 😀

  • break her Starbucks habit
  • 18 week marathon training plain starts June 13th ( marathon #2 is in October!)
  • Cross train 2x a week
  • Cook at home 6 nights a week

Suzi at SpunkiSuzi.  I have to admit, I’ve been reading her blog for a while and haven’t commented very much.  I found her through Shelley’s blog I think?  In any event, she has lots of fans, has so many blog badges she’s won from other bloggers – she rocks!  So glad her daughter Jen is home to visit – it was way overdue! 😀

  • My challenge is to get to my goal weight by my birthday September 30!

  • Journal my food no matter whether it’s good or bad!

John of 2010: Time to Challenge Myself.  He just ran his second half marathon!  Oh, and I should mention he’s already lost 78 pounds! Go check out his latest race recap here.

  • I’ve decided to join and my challenge will be to seriously train for the full marathon with my likely goal date being Oct.10th. I realize that’s longer than 101 days away but my main challenge will be to not let a cry inducing long run to derail my training for a marathon. 3 years ago I was almost bawling on my cool down walk home and talked myself out of training for it anymore rather than figure out a way to do it without pain. So Biz’s challenge will hopefully keep me focused if that 17 mile long run turns out to be a killer again” 😀

Linzi from Destiniation 26.2. She is a super cute 20-something who turned her hobby of running into a full out preparation for her first marathon in October 2010!

  • No diet soda (Well I don’t drink regular anyways, but would like to cut diet soda out of my diet)

Dave from My Year on the Grill.  Dave grills the most amazing food, that is before he and his wife Jackie got transferred to the Virgin Islands for her job and get this: no grilling allowed! I guess it’s a fire hazard!  But I don’t feel too sorry for him, I mean, he is in the Virgin Islands for goodness sakes!  He has a wonderful sense of humor, which you will appreciate with his picture he wanted me to share:

he wants his ass to be smaller so he can fit into size 38 jeans!

He’s done Weight Watchers, Adkins, South Beach – all with success, but each time felt deprived and would gain all the weight back.  You can tell by all his delicious food on the blog, he does not cut corners – you aren’t going to find kale chips there!  Here’s his goals:

  • portion control
  • moving his ass
  • eating real food, i.e., if you can’t pronounce it, not eating it!
  • no prepackaged foods as much as possible
  • cook from scratch and avoid artificial ingredients (i.e., sugar, milk, coloring, etc.)
  • incorporate fresh fruit every day

MJ Jacobson.  We are still trying to figure out her blog site, but until then, MJ is a 50-something, who like me is short, and if we were 6 feet tall we’d already be at goal weight! 😀

  • Exercise 5x a week (compared to 2 x a week now)
  • Mindful eating
  • to be able to tuck in a t-shirt into her jeans by November

Morgan of Kicking My Trash.   Poor thing has been sick the last week, but she wants to jump on the summer challenge bandwagon!

  • drink 64 ounces of water every day
  • get a tan while doing it! 😀

Susan of Susan’s Journey to Keep Fit.   She’s an empty nester who wants to kick start her exercise routine, despite having health problems, wants to keep herself accountable.

  • lose 10 pounds
  • go down a dress size
  • drink 64 ounces of water
  • eat veggies 3 x a week
  • and the big one for Susan?  no more soda!

Amanda at Two Boos Who Eat.  I love Amanda – she just recently completed a 5k – I am so proud of her!  I still love the video of her and her husband Andy at the Foodbuzz festival last year – Andy had balls and tried a raw oyster for the first time – he declared it “not bad!”  Amanda’s birthday is in October, and she’d like to fit into a smaller dress! 😀

  • Run 75 miles in 101 days
  • eat out less – down to a minimum of 1-2 times a week
  • make desserts that are less than 300 calories
  • strength rain with workout videos 3 x a week

Kelly of Fitting Back In. First off, I wish I had Kelly’s fashion and decorating sense!  And I believe I have met my match in recording everything she eats – love that she still goes out, has a couple drinks, works out, walks a lot while reading too!  Every time she does a book review I am reminded of how much I don’t read!  Keep the book reviews coming, hopefully I’ll pick one up soon!  Oh, and check out her latest post – she’s got some serious cooking organizational skills going on!

  • Run 2 to 3 runs per week (she feels she’s been slacking lately!) 😀

Ty of the Life of Ty.   I am new to this blog, but couldn’t be happier she’s decided to join the challenge!  Her husband is back from a tour of duty in Iraq, so this past Memorial Day has even more of a special meaning to her.  Glad he got home safe!

  • kick the soda habit and drink more water
  • lost the 10 pounds she’s gained since the hubs has been home from Iraq and keep it off!
  • mix it up with workouts and eats

Janie.  Janie is a long time reader, and she and I emailed back and forth when she was a little down on herself – over a year ago – in May of 2009!  Janie, I am sorry I’ve lost touch, but am glad you are joining us!

Laura at No More Weight for Me.  I am new to her blog, but through SparkPeople, she’s already down 17 pounds and is up for a new summer challenge!

  • to actually go down a size in clothing
  • lose a few inches

MB of Why the Weight?   She’s been steadily losing weight (30+ pounds!) but at a snails pace and wants to light a fire under her ass like me!  Oh, and guess I am not the only one not to wear sunscreen!  She got burned doing an outdoor routine with none other than Jillian Michaels!

  • lose an additional 20 pounds by the end of summer
  • continue to hit the gym HARD every day she’s home
  • start the C25K program
  • get off the elliptical once in a while and start hitting the weights 2x week
  • get some sort of activity on th eweekends while away at her camp
  • limit nighttime snacking

Amy of Please Don’t Eat Me!   Amy and I go back probably well over a year!  We had a similar beginning, us both getting pregnant while young and unmarried.  One of the first things that she said that made me smile is “I am glad to see someone made it!”  Her daughter “peanut” is growing up so fast!   And I love all the dance movie videos she posts!

  • eat more healthy fats
  • 20 minutes of yoga every day
  • biking 15 miles a week

Teale of Teales Meals.   I just stumbled upon her blog the other day, and when I saw she was on WW,  I invited her to join our challenge and am so happy she agreed!

  • make her 10% Weight Watcher goal
  • do a 5k as a walker

River of Losing On Purpose.   So happy she found me and is willing to join the challenge!  Also a new blog for me so I need to check her out! 😀

Katie of Katie J is on Her Way!  I love Katie, again I think I found her through Shelley’s blog.  Get this . . . she’s 13 pounds away from losing 75 pounds! Woot!   She also made my cool badge!

  • lose 13 pounds before her July 23 Alaskan Cruise!

Anne-Marie of Part of the Whole.  She is the cousin of Christina – so now I have both Christina’s mom and cousin – love the family group effort!  She used to have a much more toned body and wants to get back into that shape.  Her incentive?  A wedding in mid-October that she wants to look great for her college friends and to look good in a bikini – the wedding is in Myrtle Beach!

  • track daily eating habits, both exercise and “f-ups!”
  • eat more raw
  • some form of daily exercise, whether its a walk, bike ride or yoga
  • a stronger push toward local, in-season produce

Jenn of Jenn’s Menu & Lifestyle.   I love Jenn’s recipes because they use real ingredients and her photography is stunning!  I am so glad she decided to join the summer challenge! 😀

  • Lose 20 pounds by the end of August
  • Track calories at least 80% of the time
  • workout consistently, at least 4-5 times a week
  • keep sodium intake below 2000/mg a day, by ideally under 1500 mg/day
  • keep her days of indulgence to less than 4 times a month
  • stop wasting food!  She wants to buy less at the store and eat what they have first (I may need to steel that one from her!)

Joanne of Weight On Me at 50.  I am new to Joanne’s blog, so I can’t wait to “meet” her and check out her blog!  So glad she decided to join the group!

  • Start lifting weights at least 2x a week
  • try to eat cleaner by eating less processed foods
  • cut red meat to 2 x a week (which will be difficult because her hubs loves it!)

Mara at What’s For Dinner?  I have had the pleasure of meeting Mara in person – and its such a small world, one of her co-workers is the sister of someone I work with!!  She is a newlywed, and she and her husband just did a Food Buzz 24x24x24 by seeking out the best Chicago style hot dog!   My mouth watered just reading the post!

  • lose 20 pounds (more if possible)
  • be active every day, even the days she’s not working at a kids camp!

Biz of Biggest Diabetic Loser!  Yes, I left myself for last.  My long time readers already know this, but I was a four season athlete growing up – fall was field hockey, winter was indoor track, spring was outdoor track and summer was softball.

Here I am my freshman year of high school - a sprinter! Yes, I had big 80's glasses!

Fast forward to my senior year of high school!

But turns out after you stop moving you can’t eat whatever the hell you want!  I did great maintaining my 70 pound weight loss, until I was put on insulin – suddenly foods that I never ate were available – “you mean I can have bacon cheese fries for an extra .99 cents?”  I’ll take more insulin!  In three years I’ve gained 35 pounds back.  And while not as short as my Momma, I am only 5’2″.  My doctor reminds me on a quarterly basis that someone my size needs to weigh around 125!

I was going to take a picture like Rachel in my bathing suit, but it was a size 10 and didn’t fit.  🙁

Hannah is a member of the Class of 2010!

She is officially an alumni of High School!  I started out her day with a balloon that said “Class of 2010” and a dozen long stem roses.

We were doing our usual chores before my Mom came over, I swept the kitchen floor, vacuumed the living room, etc.  All of a sudden I needed to jump in the shower.  When I got out Hannah said “I have to go!”  Yikes!  I had just enough time to throw something on and take a quick picture.

My Mom and I were planning on leaving 30 minutes before we had to be there, but Hannah called and told us it was already packed – 50 minutes before the ceremony was supposed to start!

So we ended up sitting on the visitors side 🙁

In our hurry to get out the door, I only remembered to bring two water bottles.  No stadium seats (and we have deluxe ones from when Joe played football!), no sun screen, hats, nothing!  And it was hot!  I had no idea it was going to be that hot – and since we got there at noon and it didn’t end until 2:00, I totally got sunburned.  My mom didn’t as much, but she has more olive skin than I do.

It’s about the only time you can describe me as delicate is when you talk about my skin!

I was a sad panda last night!  (I stole your line Mari!)  I tried aloe vera “after burn” lotion, but I was still in a lot of pain – mostly my arms, neck and especially my face.  Tony did a quick search, and guess what worked??  White vinegar! I poured some on my arms, and dabbed it on my face and it took away most of the pain – I could still feel it, but no where near as much as before.  Thanks Tony!

Then this is a picture of Hannah with her advisory teacher, Mr. Marshall.  He said to me “you should be so proud of your daughter, I expect to hear great things about her in the next few years!”

And then a picture with Hannah’s favorite teacher, the German teacher, Mr. Delzell.  While most teachers only get a student for a semester here and there during a high school career, Hannah has had Mr. Delzell for every semester all four years!  They have an amazing bond, and he said to me “Hannah is so thoughtful and intelligent, I’ll miss not having her in class next year.”  It almost brought tears to my eyes!

Some Stats About Hannah’s High School:

  • to be in the top 10% of the graduating class of 444 kids, you needed a GPA higher than 4.0!
  • 2010 brought two state championships for the first time in school history – in football and volleyball
  • 92% of the students are going to college
  • Hannah’s cumulative GPA of 3.72 puts her in the 50%, which means 50% of the school had a GPA higher than 3.72!
  • The average GPA for the whole class was 3.25!
  • 1 student is headed into the military, which brought a standing ovation!

We went out to eat afterward.  I could hear everyone talking about local places they were going to lunch, so we went in a different direction and didn’t have to wait.  Um, pretty sure this place has the best tots!

While its hard to tell through the sea of tots, I got a tex-mex flat bread pizza - it had spicy shredded chicken, black beans and corn with pepper jack cheese, and a whole cup of pickled jalapenos!

Then we came home for presents.  While we gave her $$ :D, my Mom gave her a suitcase, a charm for her charm bracelet, and this collage – start in the left hand corner and go around in a circle until you get to her senior picture! 😀

Happy Graduation Hannah!

Well, today is the day!  My daughter graduates from high school in about 5 hours! 😀  It seems just like yesterday that we were at my step-son Joe’s graduation – but that was two years ago already!

Hannah found the cutest dress to wear under her graduation gown – the question of the day is if she’s comfortable walking in the three inch heels she bought, or is going the safe route and just wear flip flops!  Pictures will definitely be posted tomorrow!

I had the most non-Biz like breakfast yesterday!  For some reason, I fixed stuff for my lunch, but nothing for my breakfast!  Luckily I had a box of cereal in my desk drawer – and while a bit stale, not too bad.  It’s Raisin Bran with extra fiber – it had these little yogurt clusters that were good!

For lunch I had my leftover Chinese from the other night.  Although all I picked out was 4 ounces of meat.  I brought fresh broccoli, green pepper and water chestnuts, and 1/2 cup cooked white rice and made a stir-fry out of it – the meat was still so tender!  On the side was a Trader Joe’s veggie egg roll – I love that these are only 110 calories!

The weather was absolutely gorgeous when I got home.  Tony and I listened to music, then the Sox game while the grill heated up.  You know its summer when we have this beer!

Tony and I are doing a Mexican themed Memorial Day with carne asada – he put together this marinade it was delicious!  He based it off of this recipe, but in Tony fashion, he is eyeball kind of measurer!  We are such opposites when it comes to cooking – I like to measure out everything, while he just throws in a pinch of this and a splash of that – but everything he makes is delicious!

We cooked it on both sides to get a nice crust, then finished it off on indirect heat.

My mom is coming over to go to graduation and then out to lunch.  We have a gorgeous day so I am thankful the graduation will be outside on the football field, not crammed into a hot gym!

I have a new gym!

and could not be more excited!!  My friend and I went there yesterday to check it out, and after our tour we both signed up on the spot.  They have a special summer deal – only $115 for the summer and that includes about 15 cardio classes, free weights, state of the art treadmills, bike machines – and a nice locker room with towel service!

And probably the coolest bike machine ever!  You can sign up with a user id.  When you ride a particular course, the next time you log in, you have a “ghost” rider which is your previous ride to see if you can beat your last time!

The best part is that I’ll be able to do a spin class twice a week at 7:15 in the morning!!  That is the one class I’ve missed most since leaving a gym with classes.

Breakfast yesterday was Chobani peach yogurt and a flat out breakfast pizza!

I didn’t bring a lunch yesterday because I thought my friend and I would just grab something after the gym tour.  I forgot I had to cover the front desk during lunch, so I had 1 1/2 servings of a can of tomato soup.  I would have eaten the whole thing, but that would have been about 120% of my sodium for the day!

After the gym I was still hungry so we stopped by McDonald’s.  I got the Southwest salad, and I have to tell you  . . . I loved it! I took off the tortilla chips, and only used half of the salad dressing, but the dressing made it – it was nice and spicy!  So with the soup and the salad, lunch comes in at505 calories, 66 carbs, 34 protein, 12 fat and 1.5 fiber.

For dinner I had surf and turf on the brain.  I decided to get Tony salmon, and while I love grilled shrimp, I wanted something different.   My sister and I used to work at a high end restaurant in high school that had the best New Orleans bbq shrimp.  The only problem was that it had like a stick of butter in the sauce – but to take a fresh piece of bread and dip it in the spicy broth was something to behold!  And now that I think about it, I probably was too chicken to try the shrimp and only ate the broth!

Here is my light version!  You can do this on the stove, but I did mine in a cast iron skillet on the grill.

Barbecue Shrimp Recipe (printer friendly version here)

Ingredients

1 tablespoon Worcestershire sauce
1 tablespoon butter
1 teaspoon oregano
1/2 teaspoon paprika
1 teaspoon dried rosemary
1/2 teaspoon cayenne pepper
1/2 teaspoon Tabasco
1 clove garlic, minced
1/2 pound shrimp, deveined but shell on
1/4 cup chicken broth

Directions

  1. Combine all ingredients in a medium skillet over medium-high heat. Bring mixture to a simmer and cook, 3-5 minutes until shrimp turn pink.
  2. Season with salt and pepper to taste. Serve with lemon and French bread to dip up the flavorful sauce!

I actually forgot the lemon part – that would have been great!  I was mad when I was cleaning up and saw the lemon on the counter!

So seven shrimp were a serving!  I ended up pouring half the sauce over all my plate, so not only were the shrimp spicy, but also the steak (which I overcooked!) and corn!

Update because I can never remember!  I am submitting my grilled barbecue shrimp to Christina’s Friday First!

HAPPY FRIDAY!  Does everyone have a three day weekend like me?

So excited about the 101 days of summer challenge!

I could not be more thrilled about everyone’s enthusiasm for my 101 days of summer challenge!  As of this morning, I have 14 participants!  I plan on doing a post on Sunday introducing the participants.

It is completely up to the individual if they want to provide me with a “before” picture and a starting weight.  I know everyone has different goals, and it may be just to work out 30 minutes every day, promising to work out three times during the week while you are on vacation, to maybe even training to run a 5 or 10k by the end of the summer!  My friend Shelley just announced she’s doing a half-marathon in November, and she only ran her first 5k this year!!

I’ve also added two new pages – my daily update where I plan to show what my calories were for the day and what exercise I did.

The second page is for my weekly update on how the participants are doing.  I ask that you email me by each Saturday.  Did you have a great week?  How did you get your exercise in?  Did the week suck?  My hope is that we can be cheerleaders for each other for both our success and failures!  We can do this!

Breakfast was a typical Biz egg white/spinach sammie with a sliced apple on the side.  What works great is I usually eat my breakfast sammie and hold on to the apple.  I test my blood sugar right before we walk, and 9 times out of 10, I’ll need the carbs of the fruit as fuel so my blood sugar doesn’t drop.  It worked!  I was 119 before the walk, ate half the apple, walked for 45 minutes and when I got back to my desk it was 81 – nice! 😀

After our walk, I heated up my lunch.  This is kind of a weird combination, but it tasted amazing! While I was putting my food together, I saw that we still had some of my quick weeknight bolognese in the refrigerator.   I looked at the clock and there was no way I was going to have time to boil water and cook pasta.  What was the next best thing?  A baked potato!

My lunch was 8 ounce of baked potato, 1/2 serving of the bolognese, chopped spinach and red pepper with 1 ounce of mozzarella cheese..  Holy yum was this good!  480 calories, 57 carbs, 34 protein, 13.2 fat and 7.5 fiber.

It wasn’t until about 3:00 in the afternoon when I realized I had forgotten to defrost the ribs I had on the menu!  I have Michelle to thank for her Chinese food restaurant recommendation.  Ever since we moved out here 9 years ago, decent Chinese food has been hard to find!

We did find one fantastic place in Barrington called Chau Chu – hands down the best Chinese any of us had ever had!  But that only happened once!  The next time we went back we were like “this is good, but not great like last time!”  The last time we went?  We were the only table and Tony’s mongolian beef came to the plate practically raw – ew!  Needless to say, they are no longer in business!

I went to Chinese Palace.  Tony ordered pork lo mein, Hannah ordered chicken and broccoli, and on Michelle’s recommendation, I ordered the Mongolian Beef.  Okay, you guys know how I like my spice, and whenever I order a dish with a red chili pepper on the side, I expect it to be spicy!  Guess what?  My beef was so tender and flavorful!!  And Tony loved his lo mein.  Hannah said hers was a bit bland, and I’d have to agree, but the chicken was still very tender.  And when you spend more than $15 you get an order of crab rangoon for free!  They were really great too!  Thanks Michelle!

After I ate I measured the leftovers and it came in at a whopping 1 pound 10 ounces! Seriously, this container would have been enough for a family of four – and it only cost $9!

My friend Veronica was wondering about the name Biz.  Not sure I ever explained it before!  My given name is Elizabeth, which I didn’t even know how to spell until 7th grade!  I always went by Beth.  I had a kooky grandma who wanted to call me Eliza, or Liz, and my name turned into Biz – this was mostly in high school.  When I went to college, I decided to go back to Beth, until my sister called and asked for “Biz” and then it stuck! 😀

My office has been so hot on our side – it was finally okay yesterday, but in an effort to keep the building cooler, all the shades were pulled – what a difference that made!  What it didn’t make was very bright pictures – oh well!

I found these new low carb wraps and I absolutely love them – only 81 calories each with 5 grams of fiber! 😀

So I made wraps for both breakfast AND lunch!  Breakfast wrap was 1 cup of baby spinach, 1/4 cup black beans, 1 slice colby jack cheese, 1/2 cup egg whites and pickled japanenos, spiked with Tabasco at my desk!  And 10 of the best cherries I’ve ever had!  Sorry Shelley, are you jealous??!!  Believe it or not, this whole plate comes in at 279 calories, 25 carbs, 24 ptoein, 9.8 fat and 8.1 fiber. And it kept me full for hours!

My friend and I did our walk, in much better walking conditions!  But when I got back I was hungry!  My grocery store sells marinated chicken breasts for like $2.50 a package – when I grilled our chops the other night, I tossed one on for my lunch yesterday.  I made a Greek wrap – its basically a cup of salad mix, extra chopped carrots, 1/4 of a chopped pear (which I loved!), 1 tablespoon of Annie’s goddess dressing and 1/2 ounce crumbled goat cheese.  With baked sour cream and cheddar chips! 😀  Lunch comes in at: 431 calories, 44 carbs, 38 protein, 13.1 fat and 11.2 fiber.

Dinner was quacahummus burgers with skinny nachos on the side.  I used reduced fat cheese, 1 oz. of tortilla chips, black beans and shredded lettuce.  Our burgers ended up being 4 ounces cooked, and I put my burger on a plain bagel thin.  I have to thank Marisa for introducing me to Trader Joe’s guacahummus – only 50 calories per serving! 😀  dinner comes in at: 605 calories, 55 carbs, 47 protein, 22 fat and 3.4 fiber.

I did snack on exactly one ounce of almonds yesterday – no seconds – victory!

So what challenge am I talking about?  The summer is commonly known as the 101 days of summer, which basically is Memorial Day to Labor Day.  I plan on really challenging myself in the exercise department.  Luckily a new state of the art gym was built close to my office – and because of the proximity, I am considered a “corporate” member and get the resident discount!  For a three month trial, it will cost $115.  If I like it, it would only be $31 a month after that.

Check it out here.  It couldn’t come at a better time because my tiny office gym membership was up for renewal, and since Joe and Hannah and I haven’t used Cardinal Fitness for a while, I will drop that.  One of the most successful tools I had when I lost my weight was exercise classes.  I am a competitive person by nature, and when I see someone going full speed, I have to do my best to match it!

So here’s the deal – who’s with me? My plan is to have each participant come up with their own goal – whether you break it down weekly, monthly, or just a total at the end.  Every Saturday I would ask that you send me an email at bdl319@gmail.com and let me know if you were successful or not.  I’ll post a recap on Sundays with everyone’s successes!   This does mean that my regular posts will probably dwindle to just Monday, Wednesday and Friday.  I do plan on having a “101 Day” page that will have my own individual progress.

Here’s the big deal though . . . I plan on taking a “before” picture for all the world to see, stretch marks and all!  If I am willing to do that, you can at least join in the fun!  What do you think?  Any suggestions?

Oh, one last thing:  HANNAH’S LAST DAY OF HIGH SCHOOL IS TODAY!  They have graduation rehearsal and then the senior breakfast at a banquet hall in the next town over.  Four days til graduation! 😀

So hot and a tiny giveaway . . .

That’s one thing I hate about Chicago weather – some years we go from spring to summer in the blink of an eye!  I hate when we don’t have a longer spring season!

I had birthday breakfast club yesterday to celebrate our offices May birthdays.  I had grand visions of making hazelnut cinnamon biscotti, homemade cinnamon rolls, etc.  But when I was sweating on Sunday just vacuuming the living room, I decided to go to Plan B.  One homemade dish and the rest store bought!

I didn’t take any pictures of the assembly of this casserole, because I didn’t think it was going to be that healthy, but after putting it to caloriecount.com, it didn’t turn out too bad.  I had a 6 ounce piece of stale baguette and decided to throw together an egg casserole, using ingredients I had on hand.

Egg Zucchini Bake Recipe (printer friendly version here)

Makes 8 servings (300 calories, 17.3 carbs, 15.fat, 1.3 fiber and 19.3 protein)

Ingredients

6 ounces sourdough bread
12 large eggs
1/2 cup fat free half and half
8 ounce zucchini
4 ounce green chiles
8 ounce cheddar cheese
1 salt
1 pepper

Directions

  1. Heat up non-stick skillet with Pam. Saute diced zucchini and green chiles. In a separate bowl, mix eggs with half and half.
  2. In a 9×13 inch pan, put chopped bread on the bottom. Add zucchini mixture evenly, then pour over egg/milk mixture.
  3. Make sure all the bread has been dunked in the egg mixture. Top with 8 ounce shredded cheddar cheese. Bake at 350 for 40 minutes, or until set and golden brown.

My breakfast:  one serving of the casserole, a few strawberries and a couple blackberries.  333 calories, 24 carbs, 20 protein, 17.7 fat and 4.3 fiber.

Everyone loved it – and although I had a 4 ounce can of green chiles, it wasn’t spicy at all, which worked out okay!

My friend and I were determined to walk yesterday, even after looking on weather.com!

This was at 11:45 in the morning!

But we did our 45 minute walk – with a bottle of water!  We were so sweaty by the time we got back – it was nice to take a cool shower before heading back to my desk.

I brought 2 ounces of roast beef leftover to make a roast beef sandwich – I toasted 1 ounce of sourdough bread, spread one half of my sammie with about a tablespoon of my homemade goat cheese, yellow mustard on the bottom and the beef in the middle.  Holy cow was this good!  488 calories, 44 carbs, 38 protein, 18.2 fat and 4 fiber.

And I accessorized my lunch with a mediocre salad from our buildings cafe.  It had way too much frisee – I ended up picking half of the salad out!

I did pork chops on the grill.  I put one baked potato in the microwave.  When it was cool enough to handle, I cut in quarters and Pam fried them to get them crispy.

I made a cucumber and goat cheese salad on the side.

My plate: I ended up eating 4 ounces of pork chop (they were huge!), 2 potato wedges with spicy bbq sauce.  452 calories, 48 carbs, 38 protein, 11.7 fat and 5 fiber.

For whatever reason yesterday I was so hungry.  But I don’t think I was physically hungry, but just bored and I kept reaching into my almond stash.  By the end of the day I think I ate the equivalent of 2 ounces of almonds – about 48 of them for 340 calories!!  And last night after dinner it was all I could do not to raid the pantry!

But I went to bed without eating anything, my mind got the better of me – I told myself it would be stupid to eat anything when you are just about to go to bed!  I was in bed before 11:00 and I woke up at 7:15 this morning – nice and refreshed! 😀
