Was so much fun!  We typically don’t get together during the months of November and December, so we had a lot to catch up on!

First Tony and I went out to breakfast – in our town, not our typical Mama Rini’s.  It was just okay.  They have breakfast specials for $4.95, so I decided to get this:  2 eggs, 2 bacon, 2 sausage, 2 potato pancakes.  I was going to give one of my pancakes to Tony.

Only problem?? The potato pancakes were chock full of onions!!  So I ate the eggs, sausage and bacon.  I love link sausage! 😀

After breakfast we stopped at our local Mexican grocery store so I could pick up chips and salsa for our twin lunch.  They are homemade and delicious – best part?  Only $3 for 16 ounces!

Donna, ever the hostess, served some light Corona beer – not my usual beer, but with the lime, I absolutely love it.

We always have pizza – I had one more slice on top of this plate:

It’s funny, I didn’t take any people picks!  We got all caught up and it was a lot of fun!  Oh, and Dora gave me this cute snowman cookie jar!

Before I left, I marinated our flank steak for dinner – it’s a Bobby Flay marinade – I love all things rosemary!

Bobby Flay’s Balsamic Rosemary Marinade

  • 1/2 cup balsamic vinegar
  • 3/4 cup olive oil
  • 2 tablespoons minced garlic
  • 2 tablespoons rosemary
  • 1.5 pound flank steak
  • salt and pepper to taste

It marinated for about six hours.  Remove from marinade and season with salt and pepper.   I would have loved to grill this meat – too many icicles on the Weber though!  I broiled it for 5 minutes per side.

Remember all those tomatoes I had??  They have cooked down over the last couple of days – I had TWO of these containers of sauce!  I’ll probably can it one night this week.

Plan for the Day:

  • laundry
  • mop kitchen floor
  • hit the gym!
  • make pasta from scratch!!
