This soup recipe could not have been easier, since there are so few ingredients:
  • 8 ounces ground sirloin
  • 1 tablespoon hot sauce (I used Thai hot sauce)
  • 3 cups baby spinach
  • 8 cups chicken broth (I use soup base which comes in a jar – only 10 calories per 1 cup of broth)
  • crushed pepper to taste
  • per one cup serving: 96 calories, 5 fat, 7 protein, 3.5 carb, 1.25 fiber

Mix together the hot sauce and meat and form into marble size.

I made 30 meatballs, so 4 meatballs per one cup serving

Bring the chicken broth to a boil, then add the meatballs – you’ll know they are done when they float to the top, about 3 minutes.

I made garlic chips on the side – just sliced fresh garlic fried in 1 tsp. olive oil – I actually used Smart Balance oil because that’s what I have in my pantry at work.

I was so full from my egg sammie that this is all I had before my friend and I went on a 45 minute walk – it felt so good!  I have a salad to eat this afternoon when I get hungry.
