We had such a nice time last night!  Before I get to that though, even though I had to go into the office yesterday for an hour, I still managed to make grilled tomatillo salsa and whole wheat bread! 

I used Rick Bayless’ recipe – its very simple:

  • 1 pound tomatillos
  • 2 jalapenos (I ended up only using 1)
  • NO ONIONS
  • two cloves of garlic
  • 1/2 cup water
  • about 1 cup of cilantro
  • juice of one lime (I added that because I like the cilantro/lime combo!) :D  I rinsed the tomatillos after peeling the outer skin, and then sprayed with Pam for the grill so they wouldn’t stick.

Then just throw everything in your food processor and blend away!  It has a nice sour/spicy taste to it – I brought it over to our neighbors last night.

Now onto the bread!  This was an interesting recipe, because it only called for a 30 minute rise – and the dough was very batter-y – no kneading required!

  • 6 cups whole wheat flour
  • 1/4 cup sugar
  • 1 tablespoon salt
  • 2 packages dry yeast
  • 3 1/2 cups hot water (120 – 130 degrees)

Mix together all the dry ingredients, and pour in the hot water.  Stir by hand for 50 strokes to blend.  That’s it!  See how loose it is!

It turned out really good!  Now onto crab!!  It was a perfect night last night – so we ate on our neighbors back porch.  I wish Hannah liked crab, but that just meant more for us!

Um, there may have been a bit of butter involved! :D  I bought this tiny box wine called a Bandit – it was Pinot Grigio and actually quite good – and at $6, you can’t beat it!

So happy Joe is coming over today!!  I am off to make homemade hamburger buns, and we are going to try to make Butter Burgers – you’ll just have to come back to see how it turns out! 😀
