If you haven’t looked for it yet, you have to try Cabot’s 75% reduced fat cheddar cheese – it is SO flavorful!   I used calorieking.com to figure out the calories of this quiche – this is for the WHOLE pie!

After I shredded the zucchini, I squeezed out as much of the liquid as I could.  Just throw everything in a bowl, mix and put in the pie plate.

And I am so proud of two very inspirational ladies who have run races this week – first up is Heather at HangryPants – she ran a half marathon yesterday at an amazing 8:46 mile pace!  Awesome job!

Then there’s Meghann – who in January 2008 hadn’t run more than a couple miles – she did her first half marathon in the fall and today is running in the San Diego Rock n Roll Marathon!  Last time I checked, she’s made it past the half way mark – and at a 9:56 pace!!

Great job ladies!  I may just have to sign up for a race of my own! 😀
