Southwestern Egg Rolls – BSI Corn!

I decided to come up with a recipe using just what I had on hand.  I looked at a bunch of copy cat recipes for Chili’s southwestern egg rolls, but they all called for using tortillas and canned black beans, both of which I didn’t have.  So I give you my version!

Southwestern Egg Rolls

  • 12 egg roll wrappers
  • 8 ounces grilled chicken
  • 1 tsp. taco seasoning (divided – 1/2 rubbed on chicken prior to grilling, then 1/2 in the filling)
  • 7 ounces of corn (taken off the cob)
  • 1/4 cup chopped fresh cilantro
  • 1 tsp. cumin
  • juice of 1 lime
  • 1/2 cup vegetarian fat free refried beans
  • 1 tablespoon canola oil (mixed with Pam) for frying

The best part is that each egg roll comes in at 121 calories, 2.4 grams of fat, 16 carbs, 8.5 protein and 1.2 grams of fiber – add zero point salsa for dipping and this makes a great appetizer at home.

I just rubbed 1/2 tsp. taco seasoning before grilling

I ended up weighing the filling, and dividing that by 12 - each roll got 1.6 ounces of filling

If you haven’t looked for it yet, you have to try Cabot’s 75% reduced fat cheddar cheese – it is SO flavorful!   I used calorieking.com to figure out the calories of this quiche – this is for the WHOLE pie!

And I am so proud of two very inspirational ladies who have run races this week – first up is Heather at HangryPants - she ran a half marathon yesterday at an amazing 8:46 mile pace!  Awesome job!

Then there’s Meghann – who in January 2008 hadn’t run more than a couple miles – she did her first half marathon in the fall and today is running in the San Diego Rock n Roll Marathon!  Last time I checked, she’s made it past the half way mark – and at a 9:56 pace!!

Great job ladies!  I may just have to sign up for a race of my own! :D

Come on back for Southwestern Egg Rolls – which is my BSI recipe of the week – corn – hosted by Sophia!

Thai Marinated Chicken Wings

Note to self:  you need to marinate these wings longer than 2 hours – overnight would be better!

While I like the marinade recipe, the short time I marinated them, there was really no flavor to them at all.

  • 3 cloves minced garlic
  • 2 tablespoons fresh grated ginger
  • zest of one lime
  • juice of one lime
  • 1/2 cup water
  • 1/4 cup soy sauce
  • 1/4 worchestershire sauce
  • 1/4 cup chopped cilantro
  • 1 tsp. crushed red pepper

See you later for a recap of breakfast and lunch!  I think Tony wanted to see that new Pixar movie UP today – we love all the Pixar movies! :D

Fat Cat

When Hannah got home last night, she noticed that there was a huge cat in our back yard – it didn’t have a collar, but boy was it friendly!  We decided to give it some milk.  All I know is that our dog wanted to get at it!  I am sure if we let it, it would have walked right into our house!

doesn't seem to be hurting for food!

I woke up with hashbrowns on my brain.  I usually dice my potatoes small, boil them until they are tender, and then finish them off to get a nice crispy crunch - I used 3 potatoes and about 1 tablespoon of olive oil.

Hannah has to work this afternoon so we are off to check out some local garage sales before she has to go in.  Then Tony and I are going to head to a butcher shop – we are toying with the idea of buying meat in bulk to see how that fits into our food budget – we’ll probably stop and get a bite to eat along the way – see you later!

Date Night at Home!

While Tony and I had decided on steak for dinner, I thought I would make some sort of scallop dish – that is until I got to the store and their scallops, which didn’t look all that great, were $15 a pound!  No thanks!  So I did end up getting shrimp.   I also got some inexpensive sirloin tip steaks – two steaks for $5.  I was kind of worried that they would be awful – but they were delicious!!

But before I get to dinner, I did pretty good for my first day of the challenge – I earned 71 points today!

  • I had 5 servings of vegetables = 5 points
  • I had my 8 glasses of water =8 points
  • I walked for 45 minutes = 45 points
  • I did not have pop = 1 point
  • I read a new blog today and left a comment = 1 point
  • I had a healthy (spicy!) breakfast = 1 point
  • I kept a food journal ala www.calorieking.com = 5 points
  • Took a walk during lunch break – 5 points
I brought out the Bubba Keg - while I like that this doesn't sweat, its top heavy when its almost empty - this holds 34 ounces - I drank two of these during the day

I had an idea of making bacon wrapped scallops, but bacon wrapped shrimp filled in.

all I had to do was peel the shrimp - they were already deveined

all I had to do was peel the shrimp - they were already deveined

The recipe I had for the scallops called for precooking the bacon just a bit – turns out Tony was right – I ended up wrapping half the shrimp in raw bacon and it was a lot easier.

1/3 of a slice of bacon was wrapped around each shrimp

I also had the idea of grilling zucchini on the grill, but it looked awful at the store.  Broccoli was on sale so I decided I would try and grill broccoli - it was so good!  It was cooked, but still crisp!

I put the steaks and the broccoli on at the same time

When the steaks were done, I moved them to the outside along with the broccoli – then I added the shrimp to the barbie!

The steaks turned out so juicy!  I have to hand it to Tony who got the coals right – that’s my biggest downfall!

I took my camera on our walk – right behind our office building is a country club golf course, so the road doesn’t have a whole lot of traffic.

Lunch was a low carb taco melt – I wrapped up 2 ounces of taco meat and then folded it up – grilled it with Pam on the seam side down first, then flipped it to make a crunchy taco.  Also have 4 ounces sliced cucumber, 1/2 red pepper, 5 ounces avocado (no idea that avocados were so high in fiber – 4.8 grams for 5 ounces!), then a baby spinach salad with carrots and the last of my beloved Annie’s Goddess dressing:

drizzled with my homemade salsa (which Tony added salt to and now tastes much better!) :D

Afternoon break is over – Hannah’s working tonight so its a mini-date night dinner at home – we both agreed on steak and while I was leaning towards shrimp, I think I’ll make scallops instead – you’ll just have to come back tonight and see!
