I have a new favorite cheese!  It’s called Iberico.  I had to look it up to see what exactly it was!

IBERICO(Eye-BEAR-ee-coh)A blend of cows’ and sheep’s milk gives this cheese its smooth flavor. A popular Spanish cheese often enjoyed with a selection of fresh fruit, quince paste (Membrillo) or savored with a young red wine.

The only vegetable other than a Daikon Radish (anyone know what to do with that?  I bought it at the Japanese market and have no idea what to do with it!) was broccoli so I made a broccoli quiche bagel. 

  • 2 ounce lender’s bagel
  • 1/4 cup egg beater
  • 1/4 cup egg white
  • 1 ounce chopped broccoli (cooked)
  • .9 ounce Iberico cheese

So this is yet another cheese end that I got at the Marion Street Cheese Market in Oak Park.  It’s $17.99 a pound!  I used about 1/2 of what I bought, which was .99 cents.   Nice!

My plan is to do a Jillian circuit at lunch today and do my commercial jumping jacks tonight.
