So my Mom tried to make my Simple Crusty Bread, and it did not work out at all for her.  I kept telling her “it’s a no fail recipe!”  Not sure what went wrong, but I am making more today and will bring her some when we meet for lunch tomorrow.  Sorry yours didn’t work out Mom!  Do you want plain bread or cheezy bread??

We had to do a Sam’s Club run this morning, and since we have a business membership, we can shop before the general public before 10:00 a.m.  No lines!!  And gas was $1.81 – sweet!

Best buy today: 4 pack of Egg Beaters for only $8.58!  Usually 1 package not on sale at my store is $3.99 each!

So after Sam’s we went to Mama Rini’s for breakfast – so good!  I did pretty good – only one bite of Tony’s corned beef hash!!

I had 2 eggbeaters with pepper and Tabasco, hash browns, 3 pieces of bacon and 1 slice whole wheat toast with a pat of butter – so good!

So its only 10:45 but it seems so much later since we were up so early – I typically don’t get out of bed until 10 on Saturdays!  Pretty sure I see a nap in my future this afternoon!   Off to put the groceries away and do the regular Saturday cleaning and laundry.  I am also planning on working out today!  I think my cough/bronchitis is officially gone!  Yahoo!  See you later!

Taco Fiesta!

Can I just say that its weird not having pizza tonight??  But Hannah and I love having Mexican food anytime!  I remembered that I still had chicken in the fridge left over from our baked orange chicken and decided to cook that up for me and Hannah.  Tony got shrimp!  I did a quick 15 minute marinade – juice from 1/2 lime, fresh chopped cilantro and taco seasoning.

Then I just grilled his on our cast iron griddle – only took a couple minutes!

Then I just mixed up taco seasoning with our chicken – it had been marinating in the orange chicken marinade, but after I added the taco seasoning that all we tasted.

So my dinner:

  • 2 tostadas
  • 3 ounces chicken
  • 1/4 cup fat free refried beans (split between each tostada)
  • 2 tablespoons fat free sour cream
  • 1/2 ounce Mexican shredded cheese
  • Taco bell mild taco sauce
  • 1 ounce tortilla chips
  • 1/4 cup fresh guacamole
  • lime juice over tostadas
  • Tabasco!
Dinner comes in at 532 calories, 25 fat and 44 carbs

Lunch time loot and stiry fry

So this gourmet grocery store by my office is closing its retail business and I had ordered THE BEST salami from them, because it is amazing.  I bought some for my parents-in-law at Christmas and they ate it, and finished it before they even got home!  I am sending them some more today!

So while I was there picking the salami up, I got a couple more things, as everything was 75% off:

Behind Tabasco sauce, mustard is my favorite condiment.  To show you just how much Tony loves me, he drove me to Mt. Horeb, Wisconsin to go the the Mustard Museum!   He bought a T-shirt there that says “Poupon U!”

3 oz. firm tofu, 3 oz. broccoli slaw, 3 oz. broccoli/carrot/peapod mix, Wonnie's hot korean BBQ sauce (only 20 calories a tablespoon!), 1/4 block of ramen noodles cooked and 3 oz. bean sprouts, and 1 tablespoon peanuts

Wow, I had a relaxing morning!   Everyone was out of the house by 6:45 – Hannah to school and Tony to a Dr. appointment.   So I poured myself a cup of coffee and watched Wednesday’s episode of American Idol.  Wow, most of them sucked!  I LOVE Norman Gentle – he was by far the most entertaining!  I still haven’t watched who gets voted in the top three, I’ll watch that over the weekend.

Breakfast is another frittata: 3/4 cup egg whites, 1/2 serving tater tots, 3 ounces of broccoli slaw (that I cooked in the microwave before baking) and 1 ounce of the 75% reduced fat cheddar cheese.  I baked it at 350 in my cast iron skillet for about 10 minutes.

Delicious!  Of course sprinkled with Tabasco!

Chicken Saltimbocca

As I was making dinner tonight, I was trying to recall if I have ever made this before and I don’t think so!  It turned out really good!  I wasn’t completely satisfied with the wine sauce, but the chicken was “very moist” according to Tony!  The funny part is that I bought chicken cutlets, and as Hannah was helping me, she’s like “you can buy chicken that thin??!!”  She doesn’t like thick chicken and when I typically buy regular chicken breasts I have to pound the hell out of hers!  This dinner was a winner with her!

Chicken Saltimbocca

  • 4 thin-cut chicken breasts (buy cutlets if you can)
  • 4 thin slices of proscuitto
  • 2 tablespoons olive oil
  • 1 1/4 cups white wine
  • 1 teaspoon lemon juice
  • 2 tablespoons butter
  • 1/2 cup flour for dredging
  • pepper to taste
  • 8 sage leaves

Heat your oven to 200 degrees.  This will keep your chicken warm while you make the sauce.

Pat chicken dry.   Dredge the chicken in the peppered flour, shaking off any excess.  Lay chicken flat and sprinkle evenly with minsed sage.  Place 1 slice of prosciutto slice on top of each cutlet, pressing to make it stick.

Heat 2 tablespoons oil in skillet over medium-high heat.  Add sage leaves and cook for 15 seconds until they start to change color and are really fragrant.  Remove to paper towel.

Add chicken prosciutto-side down, and cook until golden brown, 2 to 3 minutes.  Flip and cook on other side for 2 minutes more.  Transfer to a wire rack set on rimmed baking sheet and keep warm.

Pour off any excess fat from pan.  Stir in wine, scraping up any browned bits and simmer until reduced, about 5 minutes.  Stir in lemon juice. Turn heat to low and whisk in butter, 1 tablespoon at a time.  Off heat, stir in salt and pepper.  Remove chicken from oven and spoon sauce over chicken.  YUM!  I had a cup of green beans on the side.  Dinner comes in at:

  • 476 calories
  • 18 grams of fat
  • 33 carbs

I had Hannah bake four potatoes when she got home from school.  I forgot to tell her that they only needed to cook for an hour, so they probably cooked for 90 minutes – so they were really well done and the skin was crunchy!   But it worked out okay because I just scooped out the flesh and mixed with 1/2 cup fat free half and half and salt and pepper (no butter!).    They were really good!

I did get a bit snackish this afternoon – so I had an ounce of pretzels with mustard:

I was the high bidder on this bread for Meghann’s bake sale to raise money for her marathon.  So thanks for having the fund raiser so I could have this great bread!  I think I’ll put a slice in the toaster for breakfast tomorrow. 

So I’ve got Kath & Kim to watch, and Hell’s Kitchen tonight.  I think I’ll only watch the part of American Idol that has Norman singing – he cracks me up!  Off to relax – and thanks to Hannah for letting me use her laptop!  We are currently having thunderstorms and I don’t like using the home computer when its stormy.   See you tomorrow – Friday already!!

I was going to run a couple of errands at lunch, but decided to stay in!   Lunch today was delicious, but first, I restocked my “pantry” at work.  I was out of crushed red peppers, Pam spray and Italian seasoning.  I kind of just “claimed” this cabinet next to the oven!

Bread crumbs (from my crab cakes the other day) and sugar free syrup - haven't used that in ages though!

Spaghetti Squash for lunch!!

  • 12 ounces cooked spaghetti squash
  • 1/2 cup marinara sauce
  • 1 ounce diced salami (not sure if you can see it!)
  • 1.5 cups baby spinach
  • 3 ounces cucumber
  • 2 ounces carrot
  • 2 tablespoons Annie’s artichoke and Parmesan dressing (so good!)

Altogether lunch comes in at 451 calories, 21 fat and 54 carbs (10.6 grams of fiber too! :D )
