I had some errands to run at lunch, and knew that I’d be by a really good sushi place, so since Tony can’t get to the sushi, I brought it to him!  Sadly, I missed one item that he wanted, but everything he got he said was really good and fresh!

I had pork bbq on my brain.  My grandfather used to make the most AMAZING Carolina pork barbecue recipe, second only to my Aunt Martha’s.  Now mind you, this is a Carolina barbecue, i.e. no barbecue sauce!  It’s base is vinegar, crushed red pepper, and of course my lovely Tabasco! 

It’s usually a 5 pound pork shoulder, cooked overnight (I do mine in the crock pot).  Then you remove and when cool enough, I pick out most of the big pieces of fat.  Then I chop the meat fine and add the vinegar, red pepper flakes and Tabasco.  It continues to cook until dinner – the smell in the house is amazingly good!

It’s usually served on a bun, with coleslaw!  The first time I made it for Tony, first words out of his mouth was “where’s the barbecue sauce?”  and proceeded to put K.C. Masterpiece on it!  My Aunt Martha’s husband puts ketchup on his!

So my sammie today was 4 ounces of the cooked meat from last night (165 calories) 2 tablespoons K.C. Masterpiece (60 calories) and a light bun (80 calories).   With baby carrots and sliced cucumber with light ranch.

My brother Charlie posted a recipe for Monkeyball Sandwiches.   As soon as Tony read that he said “make it so!”  That’s what I am fixing for Tony tonight, and Hannah and I are having pasta.

I have everything but buns, so I’ll pick those up on my way home.  See you then!
