Okay, not the healthiest way to start the day, but the bread I baked yesterday meant only one thing: French Toast!

Denny’s French Toast

  • 2 eggs
  • 1/3 cup fat free half and half
  • 3 tablespoons splenda
  • 3 tablespoons flour
  • pinch of salt
  • pinch of cinnamon
  • 4 one ounce slices of bread
  • 1 teaspoon butter (to pan fry with butter flavored Pam)

Mix together the eggs, milk, flour, splenda, vanilla, alt and cinnamon.  I used my stick blender to get the batter really smooth.

heat a large skillet.  When the skillet it hot, add the butter and spray with Pam.

Dip each slice of bread into the batter for 20 seconds on each side.

Cook each slice 1 – 2 minutes per side until golden brown.  I served with 1/4 cup sugar free syrup (oh, and two sausage links!)

The batter gave the bread a nice crispy crust, while staying soft in the middle.  So good!

Here’s a cute picture of Ed my daughter took last night.

The plan is to go to the Mall 😀 and figure out the menu for the week, then grocery shop.
