Yes!  It’s my lunch and I can have Mexican every day if I want!

When looking through the fridge this morning, I realized I needed to use up the last two homemade tortillas that I made last weekend.

  • 2 homemade tortillas (toasted in the toaster – it worked!)
  • 1/4 cup vegetarian refried beans (end of the can finally!)
  • 1.5 ounce chopped steak sprinkled with taco seasoning
  • chopped red pepper
  • chopped spinach
  • 1/2 ounce pepper jack cheese
  • 1 cup of my Taco Soup
  • (and another pop!  This time my favorite Dr. Pepper)

We ended doing a BRISK walk/run at lunch today for 40 minutes.  I am hoping to get some road running done this weekend with my daughter on the 5K course to see how hilly it might be.  It’s not the same as running on a treadmill!  I can run a lot longer on a treadmill.  Maybe that’s because I am watching FoodTV at the same time?!

Pizza Party Friday again tonight!  I suggested calzones to my daughter on the way to school to shake things up, but she’s not a huge sauce fan, so she wants her usual Momma thin crust tonight (with onions – yuk!). 

Going to try a Pizza Margherita for hubby.  The base isn’t sauce, but diced marinated roma tomatoes, olive oil, garlic and fresh basil and mozzarella cheese.  Yum! 😀
