Since its just me for dinner tonight, I decided to use the last of the beer can chicken to make Ramen noodle soup.  So simple!

  • 8 ounce chopped chicken
  • 1 cup chicken broth
  • 4 cups water
  • 3 ounce chopped carrots
  • 6 ounce diced canned potato
  • 1 package chicken ramen noodles (with seasoning)

Just throw everything except noodles in and simmer until carrots are cooked.  Add noodles and its done when the noodles are cooked through – about 5 minutes.  The only other seasoning I add is cracked pepper and Italian seasoning.
